This bacon cheeseburger crustless quiche is one of my favorite reimaginings of classic bacon cheeseburger flavors (right up there with my Bacon Cheeseburger Dip). It turns all the classic ingredients, from the beef and bacon to the cheese and toppings, into a unique egg dish. Unexpected presentation, same great flavors!

We love this for an easy weeknight dinner, especially when the kids are demanding Air Fryer Hamburgers for the third time that week, and I just want something different. Keeping the quiche crustless means it’s gluten free AND keto-friendly. It’s a win for everyone.

Why I Love This Crustless Quiche Recipe

  • Easy to make. This bacon cheeseburger quiche can be on the table in under an hour – and about half of that time is bake time. I love that it’s so quick and easy. Perfect for those busy weeknights when you’re craving something different.
  • Bacon cheeseburger flavor. Of course, you have eggs and gooey cheese. But when you sink your teeth into meaty bits of beefy burger and ketchup and crumbled bacon, this bacon cheeseburger quiche has so much more flavor than any egg dish you’ve tried before.
  • Breakfast, brunch, or dinner. Bacon cheeseburger crustless quiche is an “anytime” meal. I typically serve it for dinner, but it makes a great savory addition to a brunch spread. And it’s the best excuse ever to have cheeseburgers for breakfast!

Frittata vs crustless quiche

A quiche is a savory baked egg custard dish. This means the eggs are typically mixed with milk or cream, and fillings like meats, vegetables, or cheese are added. And most often this mixture is poured into a crust before baking. To make it gluten free and keto-friendly, you can forego the crust entirely, like in this bacon cheeseburger crustless quiche recipe.

The lack of crust is what makes some people confuse crustless quiche with a frittata. However, a frittata differs from quiche in that it is more like an omelet with no milk added. You start by cooking the eggs partially in a pan on the stove, top it with your add-ins, and then finish it in the oven, like in my Spinach Frittata. So the overall cooking time is really just minutes, while a quiche usually needs at least 30 minutes in the oven, and sometimes more if it has a crust.

Key Ingredients

Let’s take a look at the ingredients needed to make this crustless quiche. You can find the exact measurements in the recipe card below.

  • Bacon – I like to cook small amounts of bacon in the air fryer. See my post on How To Cook Bacon for full details on many methods. You want it crispy and crumbled for this quiche.
  • Onion – Adds flavor to the mixture.
  • Lean ground beef – I like to use 90/10 lean ground beef.
  • Ketchup – I like to use homemade ketchup to ensure it’s gluten-free.
  • Worcestershire sauce – In the US, at the time of writing, the Lea & Perrins brand is gluten-free. Coconut aminos can be used for a keto version.
  • Eggs – I used large eggs.
  • Milk – Any milk will work. Use whole milk for a creamier filling.
  • Salt & pepper
  • Dry mustard – I add this to all of my egg dishes to deepen the flavor. I like Colman’s Dry Mustard.
  • Cheddar cheese – Yellow or white is fine, and extra sharp makes it extra tasty.
  • Burger toppings – The fun part of this bacon cheeseburger quiche is adding all the burger toppings. Some options include Big Mac sauce, ketchup, tomatoes, avocado, onion, lettuce, pickles, or any other burger toppings you like.

How To Make Bacon Cheeseburger Crustless Quiche

Here’s an overview of how easy it is to make this bacon cheeseburger quiche. The printable instructions can be found in the recipe card below.

  • Prep. Preheat the oven to 400°F. Grease a glass pie plate.
  • Cook the bacon. Cook the bacon until crisp. Drain, crumble, and set aside.
  • Saute the onion. Heat oil or reserved bacon grease. Add the chopped onion, salt and pepper. Sauté until soft and translucent.
  • Brown the beef. Cook the beef, breaking it into small pieces, until fully browned. Drain any excess grease. Remove from heat and stir in the ketchup and Worcestershire sauce.
  • Make the egg mixture. Whisk together the eggs, milk, salt, pepper, and dry mustard.
  • Assemble. Transfer the beef mixture into the pie plate. Top with bacon and shredded cheese. Pour the egg mixture on top.
  • Bake. Bake for 25-30 minutes. The egg should be cooked through and the top browned.
  • Add the toppings. Let the crustless quiche rest for a few minutes, then slice and serve. Top with any desired burger toppings, like Big Mac Sauce, ketchup, tomatoes, avocados, onion, lettuce, and pickles.

Recipe Tips & Tricks

This bacon cheeseburger crustless quiche is pretty easy and straightforward to make, but I still have a few tips to share.

  • Grease the pan. Greasing the pie plate ensures that the quiche easily removes from the pan after being sliced. Otherwise, the burger can be left behind.
  • Customize the mix-ins. Skip the bacon if that’s not your thing, or saute some mushrooms with the onion for a mushroom burger twist. The cheese can be switched up, too.
  • Prevent overbrowning. I like to check my quiche at the 20-minute mark. If the top is browning too much but the eggs aren’t done, I cover the top with foil to prevent it from burning.
  • Rest before slicing. Let the quiche rest for 5 minutes or so before slicing. This gives the cheese layer time to solidify.
  • Add toppings to the slice. If I plan to have leftovers, I add the toppings just to the slices being enjoyed immediately. If you’re serving a group and don’t expect leftovers, the toppings can be added to the whole pie.

Proper Storage

While a traditional quiche runs the risk of the crust getting soggy if you chill or freeze it and then reheat it, this gluten free quiche does not have that problem. It is perfect for meal prep because you can make it over the weekend and reheat a slice in the microwave as you need it.

  • Fridge: Leftover bacon cheeseburger crustless quiche can be wrapped or transferred to a storage container and kept refrigerated for 3 or 4 days.
  • Freezer: It can also be frozen for up to 2 months. You can store it whole or in individual slices.
  • Reheat: The crustless quiche can be reheated in individual slices in the microwave. Cooking time will vary but check it every 30 seconds or so to keep the eggs from overcooking and getting rubbery. But be sure to heat it until it is steaming hot. You can also place the full quiche (thawed, if it was frozen) in the oven at 350°F until it is hot.

Ingredients

  • 3 slices bacon , cooked until crisp and crumbled
  • 1 teaspoon oil or reserved bacon grease
  • half of a medium onion , chopped
  • 1/2 pound lean ground beef
  • 3 Tablespoons ketchup
  • 1 Tablespoon Worcestershire Sauce
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dry mustard
  • 1 cup shredded cheddar cheese (about 4 oz.)
  • Big Mac Sauce , additional ketchup, tomatoes, avocado, onion, lettuce, pickles, or other burger toppings for serving

Instructions

  • Preheat the oven to 400°F, and coat a 9-inch glass pie plate with oil or cooking spray. Cook 3 slices bacon until crisp. Drain, crumble, and set aside, reserving a teaspoon of the bacon grease, if desired.
  • Heat 1 teaspoon oil in a skillet over medium heat. Add half of a medium onion, chopped, and a pinch of salt and pepper, and saute for several minutes until soft and translucent.
  • Add 1/2 pound lean ground beef and cook until fully browned, breaking it up as it cooks. Drain off any excess grease.
  • Remove from the heat and stir in 3 Tablespoons ketchup and 1 Tablespoon Worcestershire Sauce.
  • In a bowl, whisk together 6 large eggs, 1/2 cup milk, 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1/2 teaspoon dry mustard
  • Transfer the meat mixture to the prepared pie plate, and top with the reserved bacon and 1 cup shredded cheddar cheese. Pour the egg mixture over the top.
  • Bake at 400°F for 25-30 minutes, or until egg is cooked through and top is browned. Check after about 20 minutes. If the top is browning too much, cover with foil and continue baking until the eggs are set.
  • Rest for 5 minutes before slicing and serving with Big Mac Sauce, additional ketchup, tomatoes, avocado, onion, lettuce, pickles, or other burger toppings.

    Great use of leftover hamburger. Easy to make and a quick cooking time made this the perfect supper dish.

  2. Does this recipe Freeze? I am looking for meals I can freeze the left overs and microwave later.

    I am putting together Freezer meals in case i need to isolate due to covid

    1. Yes, you can freeze it. Just be sure to thaw it completely and don’t leave it too long in the microwave because eggs can get tough if you microwave too long. Sending you no-quarantine vibes, but good idea to be prepared just in case!

    If you’re missing the crust, for a nice twist line the pie pan with a flour tortilla first.

      1. Thanks 🙂 I do that all the time with quiches, and if the pan is oiled you get a nice flaky crust effect. To make it fit the pan better, nuke it in a plastic bag for 10 secs or so to get it nice and flexible first.

    I’m a real man who also is a great cook. This was only OK and I won’t make again. My wife agrees. We both think there are far better burger “quiche” options out there.

  7. I don’t see where to add the bacon or dry mustard. Am I missing something?

    I just crumbled the bacon and added it as well as the dry mustard when I mixed in the ketchup.

  8. Looks great! Doesn’t say when to put the bacon in, but I will try adding it to the meat mixure at the time the ketchup and worcestershire is added.

  9. Looks awesome! I am a big fun of breakfast for dinner on occasion, and this would definitely work. Maybe with some hash browns (not atkins friendly of course, but why not?).
