Spicy Buffalo Chicken Rolls

For the longest time, I loved the idea of summer rolls – they are fresh and cool and gluten free. I loved the look of summer rolls – the translucent rice paper means you can see the colors of the fillings. But I was intimidated.

So I decided to take something familiar – my Buffalo Chicken Salad – and give it the summer roll treatment. That way I could learn how to make the rolls without worrying about the filling. Truthfully, while I know that more traditional fillings are delicious, I absolutely love the cool but spicy flavor in these buffalo chicken rolls. And they are way more simple than I expected!

Instead of mixing the carrots and blue cheese into the chicken salad, I laid them right on the wrapper before adding the chicken mixture, which gave it the fun visual of seeing all the ingredients through the wrapper. It’s truly such a tasty way to enjoy an old favorite in a fun little package!

  • So easy. Rice paper rolls may seem intimidating. But if you can roll enchiladas or wraps, you can make summer rolls.
  • Perfect for when you have leftover chicken. If you’ve been grilling or you made an entire Air Fryer Chicken, this is great for the leftovers. You can even use a rotisserie chicken from the store, making this a completely no-cook recipe.
  • Naturally gluten free. Yes, those wrappers are made of rice flour, so they are gluten free!

What You’ll Need

Besides the simple ingredients for the chicken salad filling, you only need a few other items. Here is a quick overview. The full amounts are in the recipe card at the bottom of the post.

  • Plain Greek yogurt. You can use nonfat, low fat, or whole milk yogurt.
  • Hot sauce. Use your favorite. I like the classic Frank’s Red Hot.
  • Cooked and cooled chicken. Shred or chop it.
  • Salt and pepper. Season to taste.
  • Rice paper wrappers. You can usually find these in the Asian section of the grocery store.
  • Matchstick or shredded carrots. Cut them yourself or buy a bag of pre-shredded or chopped carrots.
  • Blue cheese. You’ll want it crumbled. If you aren’t a fan of blue cheese, use your favorite, such as cheddar or Monterey Jack.

How to Make Buffalo Chicken Summer Rolls

It’s as easy as stirring together the chicken salad, then rolling it up. Here’s a quick summary, but the details are in the recipe card.

  • Make the chicken salad. Combine the Greek yogurt and hot sauce, then stir in chicken and season with salt and pepper, to taste.
  • Soak and wrap. Soak one rice paper wrapper in warm water for 10-15 seconds. Lay it on a cutting board and spread some of the carrots and blue cheese on it. Add the chicken mixture. Roll about a third of the way, fold in the edges, then roll up tightly.
  • Repeat as needed. Continue the process with the rest of the wrappers and fillings.
  • Sauce and serve. Drizzle with more hot sauce, if desired, and serve with your favorite dipping sauces.

Tips for Success

  • Make sure you get rice paper wrappers. These are not the same as wonton wrappers, which are made with wheat, not gluten free, and must be cooked.
  • Work quickly. You want to roll them up while the rice paper is still pliable and damp so that it will stick and hold together.
  • Fry them up. If you prefer a crispy spring roll, you can fry the rolls in hot oil for about 5 minutes or coat them with a bit of oil and air fry at 370°F for about 10-12 minutes.

How to Serve Buffalo Chicken Rolls

Just like your favorite chicken wings, you can serve these with Ranch Dip or Blue Cheese Dressing for dunking. Enjoy them as a light meal with a wedge salad, a side of sweet potato fries, or some coleslaw. Or put out a party spread with your favorite gluten free appetizers like these:

Buffalo Chicken Summer Rolls

Ingredients

  • ½ cup plain Greek yogurt
  • 3 Tablespoons hot sauce
  • 2 cups cooked and cooled chicken, shredded and/or chopped
  • salt and pepper, to taste
  • 8 rice paper wrappers
  • 1/2 cup matchstick or shredded carrots
  • 1/2 cup crumbled blue cheese
  • Greek Yogurt Ranch Dip, Greek Yogurt Blue Cheese Dip, or your favorite Ranch or Blue Cheese Dressing for serving

Instructions

  • In a bowl, stir together the Greek yogurt and hot sauce. Then stir in the chicken to coat completely and season to taste with salt and pepper.
  • Fill a bowl or pie plate with warm water. Take one rice paper wrapper and dip it in the water for 10-15 seconds. It will start to become pliable but will soften completely after a minute or two as you are filling it. Lay the wrapper on a cutting board.
  • Lay about a tablespoon of the carrots, about a tablespoon of the blue cheese, and about a quarter cup of the chicken mixture on the wrapper. Roll up about a quarter to a third of the way, fold in the edges, then continue rolling up tightly. Drizzle with additional hot sauce, if desired.
  • Serve with Greek Yogurt Ranch Dip, Greek Yogurt Blue Cheese Dip, or your favorite Ranch or Blue Cheese Dressing for dipping.
