Why You’ll Love Greek Fries
A trip to Greece is definitely on my bucket list. Until the day I get to travel there, I’m just going to continue to bring a taste of the Greek islands to my kitchen. You can too when you make these easy Greek fries!
From the salty feta to the zesty herbs this is a way to transform ordinary fries into something special. I love serving Greek fries as an appetizer, or I’ll pair them with hearty Greek Burgers or simple Garlic Butter Chicken with a side of Parmesan Roasted Broccoli for a full meal. - Russet Potatoes: Russets are ideal for this recipe because they become wonderfully crispy when baked. But you can use other types like Yukon Gold or red potatoes. Keep in mind that the texture and flavor might slightly vary.
- Olive Oil: I prefer extra virgin olive oil.
- Seasonings: A mix of dried oregano, garlic powder, and dried thyme.
- Salt and Pepper
- Parsley: I love a sprinkling of chopped fresh parsley to finish these fries. If you don’t have fresh parsley, you can use dried parsley.
- Onion: I used a small red onion, and a yellow onion will also work.
- Feta Cheese: If you’re not a fan of feta or need a substitute, try crumbled goat cheese or even Parmesan for a different flavor profile.
How to Make Crispy Greek Fries
Have everything portioned out before you start so your prep process goes quickly. Here’s a look at how you’ll put together these fries, and you can find the detailed instructions in the recipe card lower down.
- Prep potatoes. Wash, peel, and cut the potatoes into ¼-inch thick fries.
- Soak. Place the potatoes in a large bowl of cold water to soak for 30 minutes.
- Dry potatoes. Drain and dry the potatoes.
- Add seasonings. Place the potatoes in a bowl and add the olive oil, dried oregano, garlic powder, dried thyme, salt, and pepper.
- Toss. Stir and toss the potatoes to coat them with the seasonings.
- Add to pan. Place the potatoes on a greased baking sheet.
- Bake. Place in the oven and bake and bake at 425°F for 25-30 minutes until crispy.
- Add toppings. Transfer the baked fries to a platter and top them with parsley, chopped red onion, and crumbled feta cheese. Then serve!
Tips for Success
- Cut potatoes to uniform size. Make sure to cut the potatoes into similarly-sized pieces so that they cook evenly.
- Soak the potatoes. To remove excess starch, and to make these fries nice and crispy, soak the potatoes in a bowl of water for 30 minutes. Then drain the potatoes and continue with the recipe.
- Don’t overcrowd. Give the fries enough space on the baking sheet to crisp up properly.
- Make them in the air fryer: If you want to make Greek fries in the air fryer, preheat your air fryer to 380°F and cook the fries in a single layer for about 14-16 minutes, shaking the basket halfway through for even cooking. See my Air Fryer French Fries recipe for more details.
- Make ahead tips: You can prep the potatoes and seasoning mix ahead of time, but for the best texture, bake them just before serving. If needed, you can partially bake the fries and finish them off in a hot oven just before serving.
- Greek fries variations: Try a few of these ideas to change up this recipe. For spicy Greek fries add a pinch of red pepper flakes to the seasoning mix. For cheesier fries, add shredded mozzarella along with the feta cheese.
- Add lemon. Lemon is another classic Greek ingredient, and it’s wonderful paired with this Greek fries recipe. You can add lemon zest to the herb mix or squeeze fresh lemon juice over the fries just before serving for a zesty twist.
- Try sweet potatoes. Swap sweet potatoes for the Russet potatoes and use the same method for making these into sweet potato Greek fries!
How to Store and Reheat Extras
Here’s how to keep any leftover fries, plus reheating instructions:
- Fridge – Place cooled fries in an airtight container and store them in the refrigerator for up to 3 days.
- Freezer – Transfer the baked fries to a baking sheet, place them in the freezer, and freeze until solid. Then transfer the fries to a freezer-safe bag and store it in the freezer for up to 2 months.
- To Reheat – From the fridge: Reheat in the oven at 375°F (190°C) to regain crispiness. From the freezer: Reheat directly from frozen in a 425°F (220°C) oven until hot and crispy.
Make It a Meal

- 5 medium Russet potatoes
- 3 Tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- 1 teaspoon salt

- 2 Tablespoons chopped fresh parsley
- 1 small red onion, chopped
- ½ cup crumbled feta cheese
Instructions
- Wash and peel 5 medium Russet potatoes. Cut the potatoes into evenly-sized fries, about ¼-inch thick.
- Soak the potatoes in a large bowl of cold water for 30 minutes. This helps remove excess starch and makes the fries crispier.
- While the fries are soaking, preheat the oven to 425°F. Coat one or two sheet pans with oil or cooking spray.
- Drain and dry the potatoes thoroughly using paper towels or a clean kitchen towel.
- Transfer the dried potatoes to a large mixing bowl, drizzle with 3 Tablespoons olive oil, and sprinkle with 1 teaspoon dried oregano, 1 teaspoon garlic powder, ½ teaspoon dried thyme, 1 teaspoon salt, and ½ teaspoon pepper. Toss well to ensure they are evenly coated with the seasoning mixture.
- Arrange the potatoes in a single layer on a baking sheet. For best results, do not overcrowd the potatoes; use two baking sheets if necessary.
- Bake in the preheated oven for 25-30 minutes, or until the fries are golden and crispy, turning them halfway through the cooking time to ensure even browning.
- Once baked, remove the fries from the oven and transfer them to a serving platter.
