I always feel like I am a bit behind on, well, pretty much any kind of trend. I mean, as we speak I’m sitting here in jeans and a five year old pink fleece. It’s a big deal for me that I picked up a few of those infinity scarves this year. I feel all fancy when I throw on yet another pair of jeans, a solid top, and wraps a scarf around my neck. And no, I’m not buying designed scarves either. Kohl’s, baby! Everything is always on sale, plus those awesome 30% off coupons, then add on your Kohl’s cash – they are practically paying you to shop there.

Home style and decor is not y string suit either. Apparent chevrons are hot? Or am I so behind that they are out now? My house is a half “vintage” knickknacks I’ve collected over the years, and “nouveau” kids’ toys. I’ll call it “shabby chic with an emphasis on the shabby”.

I’m just catching on to workout trends too. Sure, I’ve done my fair share of Zumba, but apparently Beachbody has been all the rage for awhile. P90X, Insanity, yeah, I knew nothing about them till recently. As I was trying to figure out a way to get back on the exercise and healthy lifestyle bandwagon, I started looking into these workouts. They all were either super long or required a chin up bar (and, hence, required you to do chin ups. Umm, yeah..). So I settled on T25 – 25 minutes, varied workouts, no equipment other than one of those band thingeys – I’m in. OOOO MMMM GGGGG! Did the first workout on Monday. What did I sign up for? Does the 30 Day Money Back Guarantee cover if you can no longer move your legs, and so have to stop doing the workout? I’m sore after Day 1. I’m going to need to be scraped out of my bed by Sunday.

Maybe I should have stayed in the dark on this trend too. Yikes!

I am also not usually up on food trends. I mean, I make delicious things, but I don’t think I am usually leading the pack, and rather tend to take inspiration from others. So I did already put these ingredients together in this awesome quinoa dish. But I was quite happy to reinvent them in salad form. The soft, slightly sweet earthiness from the butternut squash, pomegranate seeds providing texture and tartness, creamy and tangy goat cheese, lightly dressed with my favorite salad dressing are a lll and amazing way to top some fresh, slightly peppery greens.

Make sure you add Roasted Butternut Squash, Pomegranate & Goat Cheese Salad to your menu, maybe as you are starting or continuing to eat a bit healthier in 2014. It’s a wonderful side dish, but you can also make it heartier with some chicken, beef, quinoa, or maybe even some small white beans.

    haha.. you crack me up! My husband did the insanity workout with him and he was crazy. So I can just imagine what his T25 workout looks like. Praying you can move your legs by Thursday. :) hehe..
