Crispy Air Fryer Parmesan Truffle Fries
I do love a good meal at a good restaurant. But there is just something so satisfying about recreating a chef-worthy dish at home. It’s a more affordable and sometimes even healthier way to enjoy decadent and indulgent dishes. And that is certainly true here.
What are truffle fries?
Truffle Fries have become quite trendy in the past several years. Perfectly crispy potatoes are drizzled with truffle oil and sprinkled with freshly grated parmesan cheese and parsley for an umami flavor explosion! And a high price tag when you order off a menu.
But with an air fryer and a bottle of truffle oil, it’s so simple to make these right at home. Share a big pile with friends for game day. Enjoy with family as part of a holiday spread with an amazing garlic-crusted prime rib. Or just with that one special someone alongside a Valentine’s Day steak dinner.
What Does Truffle Taste Like?
If you don’t know by now, a truffle is a fungus. Since that word carries some, well, less-than-desirable connotations with respect to food, let’s just say it is in the mushroom family and grows wild, most commonly in France and Italy. But they are truly not common. It is a combination of both their rarity and their amazing flavor that makes them very expensive and prized by many chefs.
Though sometimes called mushrooms, they are like no mushroom you’ve ever had before. They carry a woodsy, earthy, deep umami flavor that is almost impossible to describe. Black truffles tend to be more pungent, and some say white truffles carry a hint of garlic flavor.
The easiest and most affordable way to aff the flavor of truffles to your food is with truffle oil, which is what is used to make these truffle fries. You’ll want to try to find truffle oil with natural flavors, not artificial. Some people prefer white truffle oil to that made with black truffles, but either will do. These small bottles of oil may seem pricey, but a little goes a long way. And once you buy it, you can drizzle it on popcorn or eggs, or even try it in some Truffle Parmesan Hummus.

When it comes to a recipe like this, there are only a few ingredients, so make sure you choose good quality because those flavors really shine through.
- Russet potatoes. These are the best type of potato for that perfect french fry texture, though any starchty potato will work.
- Olive oil. You can also use a neutral oil like avocado oil.
- Salt and pepper. To season those fries.
- Truffle oil. White or black truffle oil are both good, depending on what you can find. One with natural flavors versus artificial is best.
- Parmesan cheese. Freshly grated is best, and to really up the indulgence, go for a good Parmigiano Reggiano.
- Fresh parsley. This is one time I do not recommend substituting dried. It adds a freshness to balance all of the rich flavors.
How to Make Parmesan Truffle Fries in the Air Fryer
You won’t believe how easy it is to make something that just feels so extravagant.
Prepare the Potatoes. Scrub the potatoes, then peel if you prefer. Cut the potatoes lengthwise into ¼ in thick slices, then cut into ¼-inch thick sticks. Place the fries in a bowl of cold water and soak for 30-60 minutes. Drain and pat dry with paper towels or an old kitchen towel.
Cook in batches. Preheat the air fryer to 380°F. Drizzle the fries with olive oil and sprinkle with salt and pepper. Toss to coat, and place the fries in a single layer in the air fryer basket. You’ll cook about half or a third of the fries at a time. Cook at 380°F for 7 minutes. Then flip the fries around and cook for another 7-9 minutes to your desired crispiness. Transfer the fries to a parchment-lined baking sheet and place them in a 200°F oven to keep them warm while you cook the remaining batches.
Finish the parmesan truffle fries. Drizzle the fries with truffle oil, and sprinkle with parmesan cheese, and parsley, plus additional salt and pepper, if desired.
Tips for Success
While Air Fryer Truffle Fries are really simple to make, a few little things will make sure they turn out perfectly.
Do I need to soak the fries?
Technically, no, you can skip that step and still get yummy truffle fries. But soaking and drying them is a surefire way to get that perfect crisp exterior with a fluffy middle. The water interacts with the starches, leading to the best final product. If you don’t have the time right before you cook them, you can toss them in a bowl of cold water the night before or in the morning and keep them in the refrigerator.
Can I make thicker fries?
Sure, if you prefer steak fries or wedges, you can make them bigger. You’ll just have to increase the cooking time.
Do I have to cook them in batches?
If you have a large enough air fryer, you can put them all in at once, but you’ll want to toss them more frequently and maybe even cook them a bit longer. But spreading them out ensures that every spot can get crisped up.
How to Store and Reheat Fries
I’m going to bet you won’t have leftovers. But if you do, you can wrap them tightly in foil or place them in an airtight container. Then refrigerate for up to 2 or 3 days.
To make sure your reheated truffle fries get crispy again, do not reheat them in the microwave. They will only end up soggy. You can place them on a parchment-lined baking sheet and pop them in the oven at 400°F for about 5 minutes. Or preheat that air fryer to 400°F and pop them in for 3-5 minutes, giving them a shake after about two minutes.
Whether it’s a special occasion or a weeknight meal, you can give dinner a flavor upgrade by serving air fryer truffle fries with your favorite beef dish.

What Air Fryer Do I Recommend?
I use the Cosori XL. It has a nice, large and deep basket. While cooking multiple batches does make for crispier fries, in a pinch you can put an entire pound of fries in here and they still cook pretty well. This has a regular spot on my countertop because I use it several times a week.

- 1 pound Russet potatoes
- 1 teaspoon olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1-2 teaspoons truffle oil, or more to taste
- 2 Tablespoons grated parmesan cheese
- 1 Tablespoon minced fresh parsley
- Additional salt and pepper, if desired
