I created this recipe when I just wasn’t ready to say goodbye to summer. Everyone was moving on to pumpkin, and all I wanted were Jersey tomatoes and peaches that reach their peak in August. I no longer live in New Jersey, but I’m still obsessed with the balance of sweet and savory flavors with crisp and creamy textures in this salad.
So if you are still ready to pile lots of late summer produce and leftover chicken on top of some salad greens for a light and cool dinner, this is the dish for you. Here’s why you’ll love it…
- Best of the season. From sweet and juicy peaches to savory and fresh tomatoes, crisp cucumbers and tender greens, this salad has everything you love in the summer. Just add chicken, blue cheese, and maple Dijon dressing for a real burst of flavor.
- No cooking required. You can grab a rotisserie chicken from Costco or a package of chicken breast strips from the grocery store. But it’s also a great way to use up leftover grilled chicken or extras if you made an Air Fryer Rotisserie Chicken.
- Super versatile. You can use different types of lettuce, change up the protein, or use a different cheese. Stick with the salad dressing I recommend or use your favorite honey mustard. Heck, you can even change things up and give it more summery goodness with Strawberry Poppyseed Vinaigrette or Blueberry Balsamic Dressing. You can even add some toasted nuts for crunch.
What You’ll Need

- Salad greens. I like using a tender spring mix, but you can use your favorite lettuce. A leafy butter lettuce would be perfect.
- Cucumber. Peeled, quartered lengthwise, and sliced.
- Plum tomatoes. Slice them into wedges
- Peaches. Choose ones that are slightly soft. I also brefer freestone peaches because the come off of the pit much easier. Cut them into slices about the same size as the tomatoes.
- Cooked and chopped chicken. Use leftovers or grab a rotisserie chicken or a package of chicken breast strips from the store.
- Crumbled blue cheese. If you aren’t a fan, try some goat cheese or even just a sharp cheddar.
- Creamy Greek Yogurt Maple Dijon Dressing. This one is easy to make, but you can also use your favorite honey mustard salad dressing.
Make it a Meal
This peach salad makes a satisfying lunch on its own, but if you want to add a little more for a heartier dinner, here are some ideas:
- Add some bread. I like to serve this salad with Gluten Free Pita, but to keep the summery vibes going, try these herby Gluten Free Cornbread Muffins.
- Have soup and salad. Yes, you can make a summery soup like Instant Pot Tomato Basil Soup or Stuffed Pepper Soup lightened up with cauliflower rice.
- Other carby sides are great too. We always love a side of Smashed Potatoes and some Air Fryer Corn on the Cob in the summer.

Chicken and Peach Salad
Ingredients
- 4 cups Mixed salad greens
- 1 large cucumber peeled, quartered lengthwise, and sliced
- 2 plum tomatoes sliced into wedges
- 2 large peaches sliced
- 2 cups cooked and chopped chicken
- 1 cup blue cheese crumbles
- Creamy Greek Yogurt Maple Dijon Dressing or your favorite honey dijon salad dressing
Instructions
- Divide salad greens between four plates. Top each with about a quarter of the cucumbers, tomatoes, and peaches, and about half a cup of chicken. Sprinkle each with about a quarter cup blue cheese and drizzle with 1-2 Tablespoons salad dressing.
