Have you filled out your bracket yet? I am soooo not a college basketball fan, but I do think that the big tournament in March is kind of fun. Not that I actually watch the games. But I used to fill out a bracket and pay my five bucks to join a pool at work years ago. I’d read the newspaper and the summary of all the teams and try to pretend like I was putting some actual thought and analysis into it, but really it was an educated guess, at best. I’d get bored after a bit and just randomly finish filling it in. Or use logic like, “Well, I have family in Kentucky, so UK it is.”

And then I’d break out my highlighter and check the scores and get frustrated when I ended up in second to last place. As if I expected anything more. But being a chemical engineer obviously working with a lot of men, it gave me something to chat about with them, even if I had no idea what I was really chatting about.

If you have no idea what I’m talking about, it’s cool. We’re not here to talk about that other Madness going on this month. We’re here to talk about #MuffinMadness. Because sports fan or not, I think we can all cheer for berry-packed muffins. And the folks at Driscoll’s have a full team of new muffin recipes filled with their sweet, juicy berries. I don’t know about you, but when spring is knocking on our door, one of the first things I think about is strawberries, raspberries, blackberries, and blueberries. And muffins are perfect for all of the brunch-y occasions coming up – Easter, Mother’s Day, heck give the guys some muffins to much on as they are watching the games!

And these are muffins you can feel extra good about eating. They are made with whole wheat pastry flour so that you get that whole grain goodness, but they still have a great texture. I sweetened them with honey, but they are not overly sweet because you get those bursts of sweet juicy pockets of raspberry goodness. Then, just for fun, a few chocolate chips. Mini chips are great because you only need a small amount and they spread little bits of chocolate throughout the whole muffin.

The Bug was all over these muffins! And one of The Hubby’s coworkers said that they were awesome, and would be perfect if they were healthier than your standard muffin. Surprise!! They are!

A couple things – I totally overfilled my muffin tins with a few of these. You might want to try spreading them out to 14-16 muffins instead of the dozen I made. I planned to just pop the berries in the freezer for a few minutes to firm them up so they wouldn’t turn to mush when I stirred them in. Well, I got distracted and they froze completely. So this may have added to my baking time a bit, so keep an eye on your muffins if you don’t freeze them all the way.

{Healthier} Raspberry Chocolate Chip Muffins

With whole wheat flour, honey, & Greek yogurt, and full of raspberries and few mini chips, these are a tasty and healthy breakfast.
Servings: 14 -16

Ingredients

  • 2 cups whole wheat pastry flour
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup plain Greek yogurt
  • 1/2 cup honey
  • 1/2 tsp orange zest
  • 1 large egg plus 1 large egg white
  • 1 tsp vanilla extract
  • one half pint Driscoll's Raspberries 14-16 set aside and the remainder partially frozen
  • 1/4 cup mini chocolate chips

Instructions

  • Preheat oven to 350°F. Line 14-16 cups in muffin tins with paper liners.
  • Soft together flour, baking powder, baking soda, and salt in a medium bowl.
  • Whisk together yogurt, honey, orange zest, egg, egg white and vanilla in a large bowl until combined.
  • Stir flour mixture into yogurt mixture until barely combined. Fold in frozen raspberries and chocolate chips until evenly mixed. Batter will be thick, do not over stir.
  • Fill each muffin cup about three-fourths full. Do not overfill.
  • Top each muffin with one of the reserved raspberries, gently pressing into each muffin top.
  • Bake 10 minutes. Rotate pan and continue to bake about 12-15 minutes longer or until muffins are golden brown and toothpick inserted in center comes out clean. Cool in pan 3 minutes. Serve warm or remove to wire rack to cool completely.

  1. Totally agreeing with you about March Madness! Basketball is actually one of my least fave sports to watch, but it really is kinda fun randomly guessing my way through filling in a tourney bracket! But, yes let’s focus on the much-more-important Muffin Madness! And these muffins are a slam dunk (ugh … sorry … bad sports pun!). I’m a big fan of whole wheat pastry flour, and just love the really healthy ingredient list yet decadently healthy flavor profile of these gorgeous muffins! Pinning for sure! And hey – good luck with that bracket! 😀
