What a coincidence that today is Improv Challenge Day. You see, the Improv Challenge is one of the first group posts that I joined when I started blogging. Take a look at this post. Yikes! I can assure you that gratin tasted amazing, but it looks pretty awful, doesn’t it. And since I first joined on with Kristen, I have virtually “met” so many amazing bloggers. Lemon and lime can easily go either sweet or savory. This Creamy Greek Yogurt Honey Lemon Lime Salad Dressing is a little bit of both, actually. It’s tart and tangy, with enough creaminess from Greek yogurt and sweetness from the honey to keep it from being too harsh or overpowering. Using Greek yogurt combined with a bit of olive oil also gives that richer texture and consistency, without being heavy. You know, let’s keep our salads healthy!

I love salad with fruit, especially when you toss in some nuts and cheese, and even more especially in the summer when so much fresh fruit is available and tasting its best. This light and refreshing dressing my be my new go-to for the summer. I think it’ll be amazing on some salads with grilled chicken or shrimp, too!

A sweet and tangy, light and creamy, and perfect for all of your summer salads.

Recipe type: Salad Dressing
Ingredients
  • 2 Tbsp freshly squeeze lemon juice
  • 2 Tbsp freshly squeezed lime juice
  • 2 Tbsp honey
  • ½ cup plain Greek yogurt
  • 2 Tbsp olive oil
  • salt & pepper
Instructions
  1. Combine all of the ingredients in a bottle, jar, or other sealed container, or a bowl, and shake or whisk until thoroughly combined.
  2. Adjust seasoning with salt and pepper to taste.
