Strawberry Lime Poppyseed Vinaigrette

I had lots of ear infections as a kid.  Strangely, I almost looked forward to getting an ear infection, because I LOVED the “pink medicine”, a.k.a. amoxicillin.  I know, I was a strange kid, but I wanted to suck that stuff up with a straw.  So somehow it doesn’t bother me that this salad dressing kind of looks like that.  And we had lots of strawberries, so I have been using them in everything.

Truthfully, that is the main reason I added the poppy seeds.  So if having a salad dressing that looks like an antibiotic doesn’t bother you, then you can leave it out.

I am so excited about winning a Ninja Blender from My Judy the Foodie for making smoothies, but for making salad dressings, I love my little Magic Bullet.  It is so easy to just drop in all of the ingredients and whiz it up.  It works great for these fruity dressings, or even just for regular vinaigrettes, because it emulsifies them really well.

Strawberry Lime Poppyseed Vinaigrette

Recipe type: Salad Dressing

Ingredients
  • ¼ c chopped strawberries
  • ¼ c lime juice (approx. 2 limes)
  • ¼ c olive oil
  • 1 T honey (or agave nectar for vegans)
  • salt & pepper, to taste
  • 1 t poppy seeds

Instructions
  1. Combine all of the ingredients except poppy seeds in a mini-blender or Magic Bullet, and blend till pureed and emulsified.
  2. Stir in poppy seeds.

Adapted from my Blueberry Maple Balsamic Vinaigrette.

This looks amazing, the whole salad does, nice and refreshing, I think I’ll try it this weekend. Oh and BTW your not strange, my daughter comes running for amoxicyln LOL…we call it “bubble gum in her belly” LOL!!

You’re not the only one. I liked it as a kid, and when I worked as a pharmacy tech as an adult, I still loved mixing it up for customers!

Haha! I can picture it – you hear stories of pharmacists and doctors getting arrested for getting their hand on painkillers and stuff like that. Next you’ll see them getting in trouble for sneaking some amoxicillin.

Not weird at all…I loved amoxicillin. I was sad when I had to take it in pill form. It was the only redeeming part of getting an ear infection.

I always had a lot of ear infections when I was a kid too. I think I mostly looked forward to them so I could get out of school, but I did love what I referred to as “the bubblegum medicine” too. (And how weird is it that I’m actually craving it right now? Ha!) I’m loving the addition of lime to this–sometimes strawberry poppyseed dressing is a little too sweet for me, so adding lime is perfect!
