One of the most fun and satisfying aspects of being a recipe developer and food blogger is being inspired to revisit childhood memories and turn them into new family favorites. Only now I make them gluten free. I did that with my mom’s creamy ground beef and potatoes skillet. Today’s recipe is another example.

Most people are probably familiar with the beef stroganoff recipe in the classic Betty Crocker Cookbook. That’s the one my mom always made, and this is my variation on that recipe. Like the cookbook version, savory beef and mushrooms are covered in a rich sauce and served over a pile of egg noodles.

But there are a few differences, like Greek yogurt as an option instead of sour cream, cornstarch instead of flour, and gluten free noodles to make it something I can still eat (or spaghetti squash if you prefer a lower-carb or veggie-based version). The creamy comfort still stays the same!

Why This Is My Favorite Beef Stroganoff Recipe

  • Ready in 40 minutes. This makes an excellent weeknight dinner option because the noodles boil while the beef and mushrooms cook, so everything comes together quickly.
  • Easily gluten free. As I mentioned, there were only a few substitutions needed to make this classic comfort food gluten free. But it still tastes just as good as I remember, and I’m excited to see if you agree!
  • Multiple ways to serve it. Beef stroganoff is typically served over egg noodles, which is what I usually do. But my family also loves another variation – serving it in spaghetti squash boats. I’ve included the prep instructions for that in the recipe card, too, in case you want to try it!

Ingredient Notes

Below is a list of the ingredients you’ll need to gather to make this gluten free beef stroganoff recipe, plus some notes and substitutions. Scroll all the way down for the full recipe card with measurements.

  • Noodles – Egg noodles are traditional, and you can sometimes find gluten free ones from brands like Manischewitz. However, I find Jovial egg tagliatelle pasta more readily available near me, so that’s what I use. Another option is spaghetti squash, which I talk about more below.
  • Butter – For cooking the mushrooms and aromatics.
  • Mushrooms – Any fresh mushrooms, such as cremini or button mushrooms, work great.
  • Aromatics – Garlic & onion.
  • Olive oil – For cooking the beef.
  • Beef – I like to use sirloin steak because it cooks quickly and stays tender. Other cuts, like ribeye, sirloin steak tips, and tenderloin also work.
  • Beef stock – Or beef broth. Serves as a savory base for the sauce. Check that the brand you chose is gluten free.
  • Worcestershire sauce – Adds savory umami notes and more beefy flavor to the sauce. In the U.S., brands like Lea & Perrins and French’s are gluten free at the time of writing this post, but always check updated information. And in other countries, it is generally not gluten free, so you can omit it, or substitute gluten free soy sauce or coconut aminos.
  • Cornstarch – Thickens the sauce instead of flour.
  • Greek yogurt – I like to use Greek yogurt in place of the usual sour cream, but you can stick with sour cream, if you prefer. Lowfat and nonfat yogurt both work great.
  • Parsley – I like to finish my stroganoff with a little freshness.

  • Le Creuset Covered Skillet – I like a nice, deep pan for preparing my beef stroganoff. This stainless steel skillet is the one I use regularly in my kitchen.
  • Wusthof Knife Set – these are the three knives I use most in my kitchen. The chef’s knife slices right through the beef and onion, and I will alternate between the kitchen knife and paring knife for mushrooms, depending on what I grab first.

How To Make Beef Stroganoff

  • Cook the noodles. Cook the noodles in a pot of salted water according to the package instructions. Drain and set aside. While the water is coming to a boil and the noodles are cooking, prepare the rest of the dish.
  • Cook the mushrooms. Melt the butter in a skillet. Sauté the mushrooms and onion until tender. Add garlic and cook for another 1-2 minutes until fragrant. Set aside.
  • Cook the beef. In the same pan, heat the oil. Add the beef and cook until browned on all sides.
  • Simmer. Add a cup of broth, salt, and Worcestershire sauce. Bring to a boil, cover, reduce the heat, and simmer for 15 minutes.
  • Thicken. Whisk the remaining broth with the cornstarch. Stir into the beef mixture.
  • Add the other ingredients. Add the mushrooms, and simmer for 1-2 minutes until thickened. Turn off the heat and stir in the Greek yogurt.
  • Enjoy. Serve immediately over egg noodles and with minced parsley.

Tips & Variations

  • Serve in spaghetti squash. Instead of the usual egg noodles, you can roast spaghetti squash, scoop out the center, drain excess moisture, and return the “noodles” to the center of the spaghetti squash. Top with the stroganoff mixture. (Full details for this serving method are in the recipe card below.)
  • Try it with ground beef. For a variation on classic beef stroganoff, replace the sirloin with ground beef. The texture will be different, but it still tastes great.
  • Make chicken stroganoff. You can also substitute sliced chicken breast, chicken broth, and add in a spoonful of Dijon mustard.
  • Add the yogurt off heat. Wait to add the Greek yogurt to the very end, when the heat is turned off.

Proper Storage

  • Fridge: Store leftover beef stroganoff in an airtight container in the fridge. It’s best enjoyed within 3-4 days. I prefer to keep the noodles separate.
  • Reheat: Reheat leftovers over medium heat on the stovetop or in the microwave.

Ingredients

  • one 8-12 oz. package gluten free egg noodles (such as Manischewitz) or egg tagliatelle pasta (such as Jovial)
  • 1 Tablespoon unsalted butter
  • 8 oz. fresh mushrooms , sliced
  • 1 small onion , chopped
  • 1 garlic clove , minced
  • 1 Tablespoon olive oil
  • 1 1/2 pounds beef sirloin steak , cut into 1/2 inch thick slices
  • 1 1/2 cups beef stock or broth , divided
  • 1 Tablespoon Worcestershire sauce
  • 1/2 teaspoon Kosher salt
  • 2 Tablespoons cornstarch
  • 3/4 cup plain Greek yogurt , low fat or nonfat
  • minced fresh parsley for garnish , optional

Instructions

  • Bring a large pot of salted water to a boil and cook one 8-12 oz. package gluten free egg noodles according to the package directions. Drain thoroughly and set aside. While the water is boiling and the noodles are cooking, prepare the beef stroganoff.
  • Melt 1 Tablespoon unsalted butter in a large skillet. Add 8 oz. fresh mushrooms and 1 small onion, and saute until tender. Add 1 garlic clove and cook for another minute or two until fragrant, then remove from the pan and set aside.
  • Heat 1 Tablespoon olive oil in the same pan and add 1 1/2 pounds beef sirloin steak, cut into 1/2 inch thick slices. Cook until browned on all sides.
  • Add 1 cups beef stock or broth, 1 Tablespoon Worcestershire sauce, and 1/2 teaspoon Kosher salt to the beef in the pan.
  • Bring to a boil, cover, reduce heat, and simmer for 10-15 minutes.
  • In a small bowl, whisk together the remaining 0.5 cups beef stock or broth and 2 Tablespoons cornstarch. Stir the slurry into the beef mixture in the pan, add back the mushroom mixture, and bring to a simmer. Let it bubble for 1-2 minutes, or until thickened. Turn off the heat and stir in 3/4 cup plain Greek yogurt.
  • Serve immediately over cooked egg noodles and sprinkle with minced fresh parsley for garnish if desired.

Notes

Alternate serving option: Preheat your oven to 400°F. Cut a spaghetti squash in half and scoop out the seeds with a spoon. Bake cut side down on a baking sheet for 45 minutes-1 hour or until tender. Alternatively, you can microwave for 8-10 minutes. Using two forks, scrape the “noodles” out of the spaghetti squash and set the shells aside for later. Place the squash noodles in a paper towel-lined colander to drain the excess moisture. Place the squash shells in a baking dish. Divide the squash noodles between the shells and make a well in the center. Divide the beef mixture between the shells and sprinkle with 2 Tablespoons parmesan cheese. Bake at 400°F for 10-12 minutes, or until heated through and golden brown.
