Pumpkin Spice Latte Overnight Oats

This is my favorite pumpkin overnight oats recipe, taken up a notch with a shot of coffee and pumpkin pie spice! It’s an easy oatmeal recipe with all the sweet flavors of a Starbucks pumpkin spice latte. Make your oats the night before, and wake up to a cozy fall breakfast.

I can’t get over how much these pumpkin overnight oats taste like a pumpkin spice latte. With fall around the corner, this make-ahead oatmeal is how I get my PSL fix in between trips to the coffee shop! I make my pumpkin overnight oats recipe with yogurt, real pumpkin puree, whole grain oats, warm cinnamon and nutmeg, and a caffeine kick. It’s rich, creamy, and filling on a fall morning.
Why Pumpkin Spice Overnight Oats Are the Best Fall Breakfast
- Creamy pumpkin spice latte vibes. The combination of pumpkin, spice, warm vanilla, and coffee flavors these oats just like my favorite fall latte.
- Gluten-free. These pumpkin overnight oats are naturally gluten-free. Easily swap out ingredients like yogurt and milk to make this recipe vegan, too. Dairy-free alternatives work great!
- Make-ahead. The best thing about overnight oats is that you prep them the night before, and they’re ready to grab and go in the morning. It’s quick, easy, and perfect for meal prep.

Ingredients You’ll Need
This is a quick look with notes on what you’ll need to make these gluten-free pumpkin overnight oats. Scroll down to the recipe card for the full, printable recipe with amounts.
- Coffee – This should be chilled. I like to set aside an extra cup of coffee in the morning and let it chill in the fridge until I assemble my oats. You could also use cold brew, either store-bought or one that you make yourself.
- Milk – You can make this recipe with any dairy or non-dairy milk. Almond milk or oat milk are my favorites.
- Pumpkin puree – Make sure this is 100% pure pumpkin puree and not pumpkin pie filling, which contains sweeteners.
- Plain Greek yogurt – You could use vanilla yogurt, too. In this case, you won’t need as much additional sweetener.
- Pumpkin pie spice – You’ll find pumpkin pie spice in the grocery store, or you can make homemade pumpkin pie spice from a mix of cinnamon, nutmeg, ginger, allspice, and cloves. Chai spice would also taste great in this recipe.
- Sweetener – I use a combination of vanilla extract and sugar. You can use brown sugar, coconut sugar, or another sweetener like honey or maple syrup.
- Chia seeds – Chia helps thicken the oats. You could also use flax seeds.
- Old-fashioned oats – Make sure to use certified gluten-free oats, if needed. Old-fashioned rolled oats are the best choice for overnight oats. They still have a bit of chew even after soaking overnight. Instant oats become mushy, and steel-cut oats are too tough.

How to Make Pumpkin Overnight Oats
Making homemade pumpkin overnight oats couldn’t be easier. I like to assemble my oats in glass jars, and I’ll prepare a few at a time and store them in the fridge. They’re great for grab-and-go breakfasts and snacking.
- First, add all of your ingredients, apart from the oats, to a bowl or mason jar.
- Stir that together, then fold in the oats.
- Cover and place your pumpkin oats in the fridge overnight. The next day, stir your oats and enjoy a wholesome fall breakfast that’s ready to eat.
Optional Oatmeal Toppings
Just like a regular bowl of oatmeal, you can add your favorite toppings to your pumpkin overnight oats. These are some ideas that I’ve tried out and loved:
- Fresh berries
- Cacao nibs
- Mini chocolate chips
- Pumpkin seeds (pepitas)
- Chopped pecans, cashews, or almonds
- Homemade maple granola
- Caramel sauce
Quick Recipe Tips and Variations
- Make it decaf. If you’re avoiding caffeine, make this recipe with decaf coffee instead.
- Adjust the spice. I give a range for the amount of pumpkin pie spice in the recipe. This is so that those who love it can add more, and those who prefer just a hint of spice can adjust accordingly.
- Make it creamier. For extra creamy oats, feel free to add more milk or yogurt when serving. You can also add extra if you find the oats have thickened up too much overnight.
- Try a chocolate version. Check out my chocolate pumpkin spice oatmeal, or add a spoonful of cocoa powder to this recipe.
- High-protein pumpkin overnight oats. Add your favorite protein powder or nut butter, like peanut, cashew, or almond butter.
- Maple pumpkin overnight oats. Swap sugar or sweetener for pure maple syrup (make sure it’s not artificial pancake syrup).

How To Store Overnight Oats
Store your pumpkin overnight oats in an airtight storage container or glass mason jars with tight-fitting lids. As long as you use fresh ingredients (specifically the milk and yogurt), these pumpkin overnight oats last in the fridge for 3-4 days. I don’t recommend freezing, since the oats and dairy can get grainy when thawed.
I like to make overnight oats in the wide-mouth jelly jars. The amount in the recipe fits perfectly and they don’t take up too much space in the fridge if you make several at a time.

Pumpkin Spice Latte Overnight Oats
Ingredients
- 1/4 cup brewed coffee, chilled
- 1/4 cup milk I use Silk Unsweetened Almond Milk
- 2 Tablespoons plain Greek yogurt
- 1/4 cup pumpkin puree not pumpkin pie filling
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla
- 2 1/2 teaspoons sugar or equivalent amount of honey, stevia, or sweetener of choice
- 1 Tablespoon chia seeds
- 1/2 cup old fashioned oats gluten free, if necessary
- 1 teaspoon mini chocolate chips cacao nibs, or pepitas, optional
- Additional milk if needed
Instructions
- In a bowl or jar, combine all of the ingredients except the oats and stir until combined and smooth.
- Add the oats and stir until moistened.
- Place in the refrigerator overnight.
- If desired, stir in additional milk to desired consistency before serving, and sprinkle on toppings.
