Watermelon Pizza – My Kids LOVE This!
Over the years, I like to think I’ve made my family a lot of good dinners and desserts, from our favorite lasagna recipe to homemade ice cream cake. Yet my kids’ biggest raves from when I make breakfast sandwiches or boxed macaroni and cheese. And the one year when we had no Fourth of July plans, but I felt compelled to make something festive with whatever I could find in the fridge and pantry. It’s this dessert that lives on in their memories. My friends, it’s this watermelon pizza.
When they started requesting it every single summer, I knew I had to share it with you! You are going to love it as much as my boys. Here’s why…
- Couldn’t be simpler. It’s literally a slice of watermelon topped with your preferred whipped topping, berries, and any other sprinkles or toppings that strike your fancy. That’s why it’s fun to get the kids in the kitchen and let them help out.
- Easily adaptable. You can use a shortcut with canned or frozen whipped topping. Make fresh whipped cream, even swapping the sweetener for a sugar-free option. Or use whipped coconut cream to make it without dairy.
- Perfect for any occasion. As I mentioned, I like to use berries and sprinkles to make this for the Fourth of July. But you can top it any way you like as a treat on any hot summer day!
What You’ll Need
Here’s a quick rundown of the ingredients to make watermelon pizza. But remember, you can feel free to swap out the toppings for whatever you enjoy. Scroll down to the recipe card for the full amounts and detailed instructions.
- Watermelon. You can get a small one to make mini pizzas to serve one or two. Or grab a big one to make larger dessert pizzas to share with a crowd.
- Whipped topping. I like to make freshly whipped cream using heavy cream, powdered sugar, and vanilla. But you can swap the cream for coconut cream, and I share instructions for both in the recipe card. Or use the spray whipped cream in a can or whipped topping you find in the freezer section. For a lighter option, try vanilla Greek yogurt or even this cheesecake dip.
- Fruit. I usually used a mixture or strawberries and blueberries, but feel free to add raspberries, blackberries, banana slices, pitted cherries, or eve go tropical with mango, pineapple, and kiwi,
- Other toppings. A scattering of sprinkles or a dusting of powdered sugar is fun. However, you can also add chopped nuts, shredded coconut, a drizzle of chocolate glaze, white chocolate chips, marshmallows, or anything you have in your pantry.
Quick Tips
- Struggling to cut those thick slices? My husband might have bought this slicing knife for when he is smoking brisket, but I love it for everything from slicing watermelon to cutting rice krispies treats into perfect squares!
- Dry the fruit well. If there is too much moisture, it’ll make the whipped cream runny.
- Serve right away. While it can be refrigerated for a short time, this is not a dessert you want to let sit out all day. You can have all of the toppings and watermelon slices prepared, but it’s the yummiest when you make the watermelon pizza and enjoy it immediately.
- Use extra fruit. Check out how to cut watermelon cubes, and toss them into this Grilled Shrimp Salad with Mango and Watermelon, or freeze the cubes for a Watermelon Smoothie. If you have a mixture of berries left, they’ll be wonderful in this Mixed Berry Baked Oatmeal.
