Buffalo Bacon Blue Dip

First it is Back to School with no time to cook, so many folks resort to fast food, then we roll into Halloween candy and Thanksgiving, well, umm, everything (mmm, pie).  Next December rolls around, and fuhgeddaboutit (I’m from Jersey, I can use that phrase).  January arrives and we are all just getting our healthy eating habits back on track and… WHAM!

Buffalo Bacon Blue DipIt’s the Super Bowl!  A day second to only Thanksgiving for calorie consumption.  And not that I am opposed to a day of gluttony here or there, but, well, I guess I am just jealous.  Darn gestational diabetes means that a day of continual snacking is not in the cards for me.   I know, cue the sad violins.

So what a perfect opportunity for me to whip up a high protein, low carb dip for some nice, healthy veggies that has all the flavors of traditional Super Bowl foods, but won’t send my glucose meter into high alert.  Start with some Chobani 0% plain yogurt, add some hot sauce, blue cheese, and a bit of center cut bacon, and who needs wings?! I don’t even like dealing with the skin and bones anyway, all to get one little nibble of meat.  And I am scared of my deep fryer.

I could totally eat this stuff with a spoon, but I will get myself a nice stack of carrot and celery sticks, and since I do need some (gluten free) carbs, a few baked corn tortilla chips, and that might just be my dinner Sunday night.  Not gonna mention that I had it for lunch already a couple of times this week.

And just to balance things out (you know, Cupcakes & Kale Chips), I am going to bring you something a bit gooier and carby-er for #SundaySupper.  We are throwing a last minute Super Bowl Party, and I am sharing something that you can throw together in minutes, maybe even with some things you already have in your kitchen, and it can definitely feed a crowd.  With all the awesome foodies that are part of that group, I can assure you that it will be a party to remember!  Check out the preview from Jen at Juanita’s Cocina.

Buffalo Bacon Blue Dip

BACON!  But mix it into some Chobani… BAM!  Health food!  And I know Superbowl parties are usually fun and casual, but in a few days, I will show you a fancier way to present this yummy dip, maybe as a little Valentines Day appetizer.

Buffalo Bacon Blue Dip
 
A protein packed dip with all the flavor of your favorite wings.
Author:
Recipe type: Dip, Appetizer, Snack

Ingredients
  • ½ c Greek yogurt (I used Chobani 0%)
  • 4 T hot sauce and/or apple cider vinegar (4 T of hot sauce gives it a good kick, so if you want less heat, cut down on the hot sauce and replace the liquid with apple cider vinegar
  • 4 oz, about 1 c crumbled blue cheese
  • 6 strips center cut bacon, cooked and crumbled
  • Carrot and celery sticks, tortilla chips for serving

Instructions
  1. In a bowl, combine the Greek yogurt and hot sauce/apple cider vinegar.
  2. Stir in the bacon and blue cheese.
  3. Serve with carrot and celery sticks, and tortilla chips.

Enjoy!

Thanks for bringing this to the Super Bowl Party. Blue cheese and bacon – how can you go wrong.
Yum. I’m trying to think of something low fat/carb for the Super Bowl, but it just doesn’t quite match up to all the goodies on the Party!
