Watermelon pizza is a fun and healthy no-bake dessert for the summer that the kids will love to make and eat. When you use your favorite berries and some festive sprinkles you have an easy red, white, and blue fruit pizza. It’s a perfect recipe for Memorial Day, Fourth of July, Labor Day, or any hot day when you want a fresh sweet treat. It is naturally gluten free with options to make it vegan and low carb too!

Over the years I like to think I’ve made my family a lot of good dinners and desserts. There is classic comfort food like our favorite lasagna recipe. Thanksgiving feasts with all the trimmings. Dozens and dozens of cookies. Even homemade ice cream cake.

And do you know what my kids constantly rave about? Breakfast sandwiches.

I’m Mom of the Year when I make boxed macaroni and cheese.

Forget the individual overnight French toast, homemade cinnamon rolls, and yogurt parfaits. Morning happiness comes from a bowl of cereal.

And the dessert I made on a whim two years ago when we had no Fourth of July plans, but I felt compelled to make something festive with whatever I could find in the fridge and pantry? It’s this dessert that lives on in the (albeit short) memory of my six-year-old.

In his mind, I am not sure my recipe creation skills will ever exceed the sheer perfection that apparently is Watermelon Pizza.

Now I know what you are asking yourself…

Red White and Blue Berry Watermelon Fruit Pizza Recipe

Get the kids in the kitchen to make this fun treat.

You’ve seen fruit pizza, right? Occasionally it’ll be made with regular pizza dough, but more often than not the crust is actually a big sugar cookie. Then it’s topped with some sort of frosting or sweetened cream cheese or something else. And finally, it’s decorated beautifully with fruit. Well, in this case, the crust it, you guessed it… WATERMELON!

Slice watermelon into rounds as the “crust” for your dessert pizza. Spread whipped cream, yogurt, or even whipped coconut cream for a vegan option on top. Then cover with strawberries and blueberries and patriotic sprinkles for a festive summer holiday dessert. Or use your favorite fruit or other toppings. Cut into wedges to enjoy on any hot summer day.

Toppings

Before you add your fruit and sprinkles and other decorations, you need a creamy topping. This can be as healthy or indulgent as you like. You can make a homemade topping or buy it at the store. Keep it lower in carbs by using stevia or erythritol to sweeten the topping. It can even be vegan.

  • Homemade whipped cream.
  • Storebought whipped cream from a can or whipped topping from a tub.
  • Vanilla Greek yogurt or plain Greek yogurt sweetened with honey or stevia.
  • Whipped coconut cream.
  • Or you could even make this cheesecake dip to spread on top.

Directions

  1. Buy a whole watermelon. You can get a small one to make mini pizzas to serve one or two. Or grab a big one to make larger dessert pizzas to share with a crowd.
  2. Slice all the way through the watermelon with a very sharp knife to create rounds that are about 1 inch thick.
  3. Prepare your creamy topping that you chose from the list above.
  4. Wash, dry, and cut (if necessary) strawberries and blueberries for the red, white, and blue version. You could also use cherries, raspberries, blackberries, or really any other fruit you like.
  5. Gather sprinkles or sparkling sugar or powdered sugar. You could even add white chocolate chips or chocolate shavings.
  6. Spread your chosen creamy topping all over the top of the watermelon round.
  7. Cover with fruit.
  8. Decorate with sprinkles or other colorful, sweet toppings, if desired.
  9. Cut into pizza slices and enjoy!

Red, White, and Blue Berry Watermelon Fruit Pizza

Red, White, and Blue Berry Watermelon Pizza is a fun and healthy treat for the summer that the kids will love to make and eat. Use your favorite toppings and berries!
Prep: 10 minutes

Ingredients

  • 1 watermelon *See Notes
  • 1/2 cup whipped cream or other creamy topping. *See notes for options and directions.
  • 1/2 cup strawberries, blueberries, or other berries or fruit, washed, dried, and cut into pieces.
  • sprinkles, sparkling sugar, or powdered sugar, if desired for decorating.

Instructions

  • Slice all the way through the watermelon with a very sharp knife to create rounds that are about 1 inch thick.
  • Spread the whipped cream, whipped coconut cream, yogurt, or other chosen creamy topping all over the top of the watermelon round.
  • Place berries or other pieces of fruit all over the topping, as desired.
  • If you like, decorate with sprinkles or other colorful, sweet topping.
  • Cut into pizza slices.
  • If you are not eating it right away, store in the refrigerator. It is best to assemble right before serving, but you could keep it refrigerated overnight.

Notes

*You can use a larger or small watermelon, depending on the size of the pizzas you want to make.
**Options for topping
Fresh Whipped Cream – Place the bowl and whisk attachment for your stand mixer or a metal or glass bowl and beaters for your hand mixer in the fridge or freezer until they are cold. Add 1 cup heavy cream, 2 Tablespoons powdered sugar or powdered Swerve (erythritol sweetener), and 1/2 teaspoon vanilla extract to the chilled bowl, and beat on medium-high to high speed until soft peaks form. Do not overbeat. If you are only making one pizza, you will not need all of this. Save for another use.
Whipped Coconut Cream – Place a 13.5 oz full fat coconut milk in the refrigerator for several hours or overnight. Place the bowl and whisk attachment for your stand mixer or a metal or glass bowl and beaters for your hand mixer in the fridge or freezer until they are cold. Remove can of coconut milk from the refrigerator, taking care not to shake it. Open carefully and scoop the thick, creamy portion of the coconut milk into the cold mixing bowl. Reserve remaining liquid for another use. Add 2 Tablespoons powdered sugar or Swerve sweetener and 1/2 teaspoon vanilla extract to the coconut cream in the chilled bowl, and beat on medium-high to high speed until soft peaks form. Do not overbeat. If you are only making one pizza, you will not need all of this. Save for another use.
Yogurt – use vanilla yogurt or Greek yogurt, or plain that is sweetened to taste with honey, Stevia, or another sweetener. You could also use this cheesecake dip.
