We all love a cool and creamy treat on a hot day! A bonus is if that treat doubles as a lighter snack. These strawberry popsicles definitely taste indulgent. But the short, simple ingredient list will have you happily making them and doling them out to the kiddos every time they go looking for something sweet during the summer. Here’s why you’ll love them…
- Satisfy all the cravings. They are frosty and creamy, and sweet, but not too sweet. Plus the combination of berries, yogurt, and a bit of cream cheese makes them taste like cheesecake!
- But in a wholesome way. Those ingredients mean they are filled with fruit and protein. Plus, depending on the sweetness of your berries, you can adjust how much additional sweetener you need.
- Quick to prepare. It’s as fast as making a smoothie. Just toss everything in the blender, puree till smooth, and pour into a mold. The hardest part will be waiting for them to freeze!
- Naturally gluten free. Yes, since there is no graham cracker crust like traditional strawberry cheesecake, these pops are gluten free!

What You’ll Need
Here is a short “shopping list” of the ingredients to make these creamy strawberry popsicles. The exact amounts and step-by-step instructions are in the recipe card at the bottom of the post, so keep reading!
- Fresh strawberries. Washed and dried, with the hulls removed.
- Plain or vanilla Greek yogurt. You’ll want the thick consistency of Greek yogurt versus regular yogurt.
- Cream cheese. Just a bit for that tangy cheesecake flavor.
- Milk. Either dairy or nondairy milk works fine
- Honey. Or another sweetener if you use plain yogurt and need to sweeten the mixture a bit more
- Vanilla extract. Again, only needed if you use plain yogurt
How to Make Strawberry Popsicles
It really doesn’t get much easier!
- Make the mixture. Combine strawberries, Greek yogurt, cream cheese, milk, and vanilla extract in a blender. You can also add honey depending on whether you use plain or vanilla yogurt, and how sweet your berries are. Puree until smooth. Pour into popsicle molds or four to six paper or plastic cups.
- Freeze then enjoy. Insert sticks and transfer to the freezer for 4-6 hours or until frozen. Run the outside of the molds under water and unmold the popsicles, then take a bite!
How Long Do They Take to Freeze?
While the time will vary slightly, you’ll likely need to give them at least 4-6 hours to freeze completely so you can remove them from the molds. A great option is to make them in the morning to enjoy at night. Or make them the day before you plan to eat them.
Freezer Storage
The strawberry popsicles will stay good in the freezer for a few weeks. However, to avoid freezer burn, make sure they are in a tightly-sealed airtight container.
Tips for Success
- Adjust as needed. The sweetness of the pops will vary depending on how sweet your strawberries are and if you use plain or vanilla yogurt. Adjust how much honey or other sweetener you add as needed.
- Get a good mold. While there are many options out there that are all equally functional, I love this Norpro Ice Pop Maker. The main reason is just that I love the traditional shape. Plus the lid holds the sticks into the right position so they aren’t off-centered and crooked.
- Add a crust. If you just need a crust to make them truly cheesecake-like, leave a little room when you fill the molds and sprinkle in some crushed gluten free graham crackers.
- Don’t try to scoop. If you simply freeze Greek yogurt in the freezer, it will be solid, not scoopable like ice cream. That’s why this mixture is frozen into popsicle. However, you can turn it into an ice cream-like frozen yogurt if you have a Ninja Creami.
Strawberry Yogurt Popsicles
Ingredients
- 1 cup strawberries, washed, dried, and hulls removed
- 1/2 cup plain or vanilla Greek yogurt
- 2 oz. light cream cheese
- 1/2 cup milk (regular or almond milk)
- 1 Tablespoon honey (optional, more or less to taste, depending on the sweetness of your strawberries and whether you used plain or vanilla Greek yogurt)
- 1 teaspoon vanilla extract, if you used plain Greek yogurt
Instructions
- Combine all ingredients in a blender and puree until smooth.
- Pour into popsicle molds or four to six paper or plastic cups.
- Insert sticks and transfer to the freezer.
- Freeze for 4-6 hours, or until firm.

It depends on the capacity of your molds, but typically about 6-8.
What would be the difference if I used non greek yogurt?
I would expect it would work fine. Perhaps a little more icy and less creamy of a texture due to the higher water content of regular yogurt.

It’s also difficult to get natural lighting on you know, cupcakes with frosting that likes to melt, and it’s hot outside, but it ends up working anyway. Your pictures look great, and the name catches more than the pictures to me. I can’t wait to try these! My husband is lactose intolerant, so with my vegan cream cheese, and almond or coconut milk, I will be whipping up a bunch. I know he’ll be so excited!

Is it bad that your food blogger problems made me giggle? I experience the same kind of stuff on a regular basis. That being said, I think the popsicles look delicious. I’m a big fan of strawberry cheesecake ice cream so I’d be diving right in, freezer burn or not.
I learned not to use straws for pops. I also learned that the freezer does not ruin the look of the pops. They are great. I could use one now. it is hot where I am.
