We interrupt you from your regularly scheduled peek inside The Bug’s lunchbox for Day 3 of #BackToSchoolWeek, and I’ve got an alternative to those Goldfish and Cheez-Its with some {Gluten Free} Cheddar Crackers.  But don’t let the “gluten free” scare you off – no crazy flours or funky ingredients.  Trust me on this one…

So, cheddar crackers. Your kids love ‘em. My kid loves ‘em. I honestly don’t buy crackers too often because that’s what they usually have for snack at school, and if I had them at home, he would just be eating them nonstop. But sometimes it’s just easy to grab a handful of crackers to toss in the lunch bag, or hand to your kids when they get off the bus and are screaming for a snack. Well here is a cracker recipe you can feel really good about giving your kids – protein, fiber, omega 3′s. And cheese. Gotta have cheese!
 
And even if you don’t need to be gluten free, maybe one day your kid will have a friend who does. Or you just want to cut down on the amount of wheat in your family’s diet. Or forget all that – these are just yummy and a nice change of pace. Plus they are easy. The Bug helped me make them, and his attention span in the kitchen is about 0.37 seconds.

{Gluten Free} Cheddar Crackers
 
{Gluten Free} Cheddar Crackers are a snack you can feel really good about giving your kids - protein, fiber, omega 3's. And cheese!

Recipe type: Snack, Crackers
Ingredients
  • ¾ c milled flax seed
  • ¾ c almond flour
  • 2 egg whites
  • ¼ t ground mustard
  • 1 t garlic powder
  • 1 t onion powder
  • 1 oz (about ¼ c) finely shredded sharp cheddar cheese (I used Cabot 50% Sharp Cheddar)
  • 1 T olive oil
  • ½ t baking soda
  • ½ t salt
  • 2-3 T cold water
Instructions
  1. Preheat oven to 350°F
  2. Add all of the ingredients to the bowl of your food processor, and pulse until mixed together.
  3. Add the water a little at a time, until the mixture can hold together in a ball.
  4. Divide into two balls and place each on a silpat or parchment paper.
  5. For "Goldfish" (or any other cookie cutter shape): Roll ball of dough about ⅛ inch thick and cut into desired shape using small (about 1-1½ inch) cookie cutters. Gently place each cracker onto a Silpat or parchment lines baking sheet. Prick each cracker with a fork.
  6. For "Cheez-Its": Roll ball of dough about ⅛ inch thick, into as close to a rectangle as possible. Using a pizza cutter or knife, cut into about 1 inch squares, but do not separate the crackers. Lift the mats or parchment paper onto two baking sheets. Prick each cracker with a fork.
  7. Bake for about 25 minutes, checking after the first 15-20 minutes, or until the crackers are browned. For the "Cheez-Its", if the outer crackers are getting too crunchy, remove from the pan, and return the pan to the oven to finish baking the inner crackers.
  8. Let cool, separate the squares (if you made "Cheez-Its"), and store in a sealed container for several weeks.
