When back-to-school means back to packing delicious and nutritious lunches for the kids, don’t forget about mom and dad. While you are making sandwiches for their lunchbox, pack yourself a Mediterranean Turkey Mason Jar Salad.
Mediterranean Turkey Mason Jar Salad

You might see me post pictures of The Bug’s Lunchbox on Instagram everyday. Not pictured is Little Dude’s, which is typically almost the same, with a few things swapped out here or there because his classroom is nut-free, he prefers tomatoes over carrots, and that sort of thing. But on a daily basis I fill two sets of little containers with what I think is usually a fairly nutritious mix of protein, fruits, vegetables, whole grains, the occasional treat, and maybe some superfoods thrown in just for good measure. I mix it up – a sandwich one day, crackers with meats and cheese another, carrots to cucumbers to sugar snap peas, a constant rotation of different fruits, and everything from energy balls to granola bars to muffins.
When I used to work in an office, I packed lunched for myself. Being a creature of habit, I would go months at a time eating essentially the same thing, but at least I took the time to make sure I had something much cheaper and healthier than the work cafeteria.
Now that I work from home, I’ve gotten a bit lazy. I go through the whole process of making the boys’ lunches, so I just don’t want to bother prepping anything for myself. Since I only have so many hours to get work done while the boys are at school, I’m usually quickly scrambling to get myself something to eat, and oftentimes end up grabbing a smoothie or spreading peanut butter on an apple or eating leftover veggies with a little lunchmeat or a hard boiled egg or making a super simple salad that really could use some more color and flavor. I suppose it’s fairly typical of a mom to put more effort into what my kids are eating, but I am home with my entire kitchen available to me, and I tend to not want to take the time or effort to pull together more than, like, two ingredients.
What I really need to do is just a little prep work…
While I’m making turkey sandwiches for the boys, I need to start making myself a Mediterranean Turkey Mason Jar Salad. With a simple dressing on the bottom, then layers of feta cheese, pine nuts, Jennie-O Sun Dried Tomato Turkey Breast, roasted red peppers, olives, cucumbers, and Romaine lettuce, this jar has everything you could want in a satisfying lunch. There’s salty and tangy and briny and fresh and crunchy, plus plenty of protein and veggies to keep you going through the rest of your day. I can keep the jars in my fridge, but if you are heading into the office, just grab one on your way out of the house.
When lunchtime rolls around, you just have to dump and devour…

Mediterranean Turkey Mason Jar Salad
Ingredients
- 1 teaspoon olive oil
- 1 Tablespoon balsamic vinegar
- 1/8 teaspoon dried oregano
- pinch salt and pepper
- 1/4 cup crumbled feta cheese
- 2 oz Jennie-O Sun Dried Tomato Turkey Breast cut into strips or small cubes
- 1 Tablespoon pine nuts
- 1/4 cup chopped cucumbers
- 6 kalamata olives halved or quartered
- 1/4 cup roasted red peppers in strips
- 1 cup Romaine lettuce torn
Instructions
- Add the olive oil, vinegar, oregano, salt, and pepper in the bottom of a glass jar and swirl gently.
- Layer the remaining ingredients in the order listed, adding enough lettuce to fill the jar.
- Put the cap on the jar and store in the refrigerator until ready to eat, then dump out on a plate to serve.
- Alternatively, the salad can just be prepare on a plate. Mix the drssing ingredients together in a small bowl, put the lettuce on a plate, top with the remaining ingredients, and drizzle with the dressing.

I’ve been using it in sandwiches, but next up… these mason jar salads! 🙂 When Trevor was working outside of the house, I would pack him a lunch every day.
