Wow, today just capped off what has been one heck of a winter! And I live in Maryland, so I can’t even imagine how those of you in New England or Wisconsin, or heck even back in my home state of New Jersey are dealing with it. My boys have a serious case of cabin fever. By 9 o’clock this morning they were already on each others’ nerves. The Bug hadn’t been down in the kitchen for five minutes when he was already doing everything and anything other than what I asked him to do or not to do. When Mr. Independent went off to play on his own, Mr. Everybody Pay Attention To Me was not happy, and proceeded to do everything in his power to get Big Brother’s attention, things like throwing toys and ripping down the fort we had built in the den. This all just got Big Brother all worked up till they were both running around the house yelling, knocking each other over, climbing on the brand new dining room set. Now we do have a great place in the basement for them to run around and yell – except that Daddy had to work form home, and was down in the basement on teleconferences all day.

Awesome!

The little guy was just in a mood. Things that made him melt down today – I wouldn’t let him play in the pantry, I put his pants back on after I changed his diaper, I took his plate when he was done eating, I took his cup to the fridge to get him more milk after he asked for it, I wouldn’t let him climb into the fridge.

The big dude was actually pretty good, except that trying to take ten minutes to, you know, make lunch or was dishes or finally get Mr. Crankypants down for a nap was too much to ask for, because there was something that he absolutely needed right that very instant!!

It got to the point that I told The Hubby that he could stay inside, and I was going to go out and shovel the driveway. Well, I only got through about half of it (we have a big driveway), but I just NEEDED. TO. GET. OUT. You know it’s bad when I voluntarily go out in the cold. I loathe the cold.

But since you guys are here for the food, sometimes, after all the whining and yelling and running, you just need something sweet and cute and bright and fresh to remind you that spring is right around the corner (it is, right?!?!). Something like this…

How crazy cute is this Lemon Meringue Pie Fudge?! And guys, it tastes so good. It’s got that buttery crust, and the rich, fudgy layer that bursts with lemon flavor. And of course you need a meringue topping – in the form of white chocolate marshmallow fudge. So perfect!

I even broke out the kitchen torch to give it that bruleed look of meringue! But you don’t have to go all crazy. Squares taste just as good as little pie wedges…

Lemon Meringue Pie Fudge

Buttery crust, creamy lemony fudge, and a marshmallow white chocolate topping, even brûléed a little, if you like, get all that pie flavor in a sweet little candy bite.
Prep: 25 minutes
Cook: 10 minutes
chilling time 4 hours
Total: 35 minutes

Ingredients

For the Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 4 Tablespoons melted butter

For the Lemon Fudge Layer

  • 1 1/2 cups white chocolate chips
  • 7 oz sweetened condensed milk (1/2 can)
  • 1/2 teaspoon lemon extract
  • 1-2 drops yellow food coloring if desired

For the Marshmallow Meringue Fudge Layer

Instructions

For the Graham Cracker Crust:

  • Preheat the oven to 375°F and line an 8x8 square pan with aluminum foil, leaving some hanging over the edge of the pan.
  • In a small bowl, combine crumbs and melted butter, tossing with a fork.
  • Pour into the prepared pan and press down with a glass to pack tightly and form an even layer. Bake for 10 minutes or until the edges are golden brown. Set aside to cool.

For the Lemon Fudge Layer

  • Melt 1 1/2 cups white chocolate chips in a double boiler or a bowl set over a small sauce pan with simmering water over medium-low heat.
  • Once melted, add half a can of sweetened condensed milk and the lemon extract. Stir until smooth and pour immediately over the graham cracker crust.

For the Marshmallow Meringue Fudge Layer

  • Melt the 1 cup white chocolate chips in a double boiler or a bowl set over a small sauce pan with simmering water over medium-low heat.
  • Add the marshmallow fluff and the rest of the can of sweetened condensed milk.
  • Stir until it is smooth and immediately pour over the lemon layer.
  • Refrigerate overnight. The next day, use the aluminum foil to lift the fudge out of the pan. Gently remove the foil and carefully cut into pie wedges or squares.
  • Optional, press some of the crumbs that fall off onto one side of the wedges to make it look like a slice of pie, and use a kitchen torch to lightly brulee the top of the meringue fudge layer.
