Pretty cheesecake-stuffed strawberries are filled with sweet-tangy cream cheese and dipped in chocolate for a festive no-bake dessert everyone will love! Sprinkle them with nuts, crushed cookies, and more.

Why You’ll Love These Cheesecake Stuffed Strawberries

Cheesecake-stuffed strawberries are so, so good! Elevate strawberries into something memorable in this sweet treat that takes ripe, juicy strawberries and stuffs them with a just sweet enough cheesecake-inspired filling. To take it over the top, you’ll then dip the strawberries in a pool of melted chocolate. Like my White Chocolate-Covered Strawberries with Sprinkles, this dessert is so extra and I love it for that! Some highlights include:

  • Not overly sweet. Hear me out – despite appearances, this dessert is not super sugary-sweet! You’ll need just 2 Tablespoons of powdered sugar to sweeten the filling. The naturally sweet strawberries and dark chocolate will add plenty of sweetness without emptying the sugar container.
  • Kid-friendly. Not only do kids love nibbling on these stuffed strawberries, but they’re easy enough that they can get in the kitchen to help make them.
  • Contrasting flavors and textures. Juicy, sweet strawberries, tangy cream cheese, and decadent dark chocolate balance each other beautifully in these stuffed strawberries.
  • Adjustable. You can use a low-carb sweetener and sugar-free chocolate to make these strawberries keto-friendly – and of course, they’re gluten-free!

Recipe Ingredients

I’ve outlined the ingredients in this recipe below. You’ll find the full ingredient amounts in the recipe card lower down.

  • Strawberries: Make sure to gently wash and pat dry the strawberries before using.
  • Cream Cheese: You can use light or regular cream cheese.
  • Powdered Sugar: If you want to make these low-carb, you can use a powdered erythritol sweetener, like Swerve Confectioners Sweetener.
  • Vanilla Extract: A little pure vanilla extract adds flavor to the filling.
  • Semisweet Chocolate Chips: You can use chocolate chips, although coating chocolate, like melting wafers, will melt more easily and smoothly, harden better, and usually have a better appearance without streaks or an ashy finish. Make sure to check that the chocolate is gluten-free if needed.
  • Toppings: Sprinkles, chopped nuts, graham crackers crumbs, etc.

How to Make Cheesecake Stuffed Strawberries

Just a few steps go into these beautiful strawberries, which I’ve outlined below. Find the detailed instructions in the recipe card lower down.

  • Prepare the strawberries. Hull the strawberries and widen the inside cavity.
  • Make the filling. Combine the cream cheese, powdered sugar, and vanilla.
  • Stuff the strawberries. Using a piping bag, pipe the cheesecake filling into the strawberries.
  • Melt the chocolate. Now melt the chocolate.
  • Dip the strawberries. Let the chocolate cool slightly, then dip each strawberry into the melted chocolate and press it into the sprinkles, graham cracker crumbs, or nuts, if using. Rest the strawberries on a lined baking sheet until the chocolate firms up.

Tips and Variation Ideas

  • Here’s how to hull strawberries: Wash and dry the strawberries thoroughly. If the leaves are large and in the way, gently pull them off. Using a paring knife, carefully cut around the stem to hollow out the middle of the strawberry. Alternatively, a strawberry huller is a great tool for quickly and easily removing the hulls of a lot of strawberries at once. However, for this recipe, depending on how much filling you want in your strawberries, you may still have to make the cavity a little larger with a paring knife.
  • Use room-temperature cream cheese. For the smoothest, creamiest filling, allow the cream cheese to soften on the counter before making the cheesecake filling. This will help it seamlessly blend in with the other ingredients.
  • Sift the powdered sugar. Always sift powdered sugar before adding it to a recipe to remove any clumps!
  • Try another chocolate. I love the dark sweetness of semisweet chocolate, but you can try milk chocolate or white chocolate instead.
  • Make the filling sweeter. While I love keeping this a low-sugar dessert, you may wish for a bit more sweetness in the filling. Feel free to add more powdered sugar, or try another sweetener like honey.

How Long Will They Last?

For the best quality and freshest taste, I recommend eating these strawberries on the day they are made. However, you can store them in the fridge for up to 3 days, especially if the strawberries are very fresh. Place the assembled strawberries in an airtight container and store them in the fridge for 2-3 days.

Cheesecake Stuffed Strawberries

Pretty, chocolate-dipped cheesecake stuffed strawberries make a festive no-bake dessert everyone will love!

Ingredients

  • 1-1 ½ pounds strawberries, washed and dried
  • 4 ounces regular or light cream cheese, at room temperature
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup (about 6 oz.) dark or semi-sweet chocolate chips, chopped chocolate, or candy melts , (optional)
  • Sprinkles, chopped nuts, graham crackers crumbs, etc.

Instructions

  • Remove the hull from the strawberries, and, using a paring knife, cut a slightly larger cavity into the strawberry. You can also use a strawberry huller, but you might still want to cut a larger opening.
  • In a small bowl, combine the light cream cheese, powdered sugar, and vanilla, and stir until smooth.
  • Transfer the cheesecake mixture to a piping bag or plastic storage bag with the tip cut off. Pipe the cheesecake filling into the strawberries.
  • If using, melt the chocolate in the microwave, or over a pot of simmering water. Follow package directions, if given. Otherwise, microwave in 15-30 second increments, stirring after each interval until melted.
  • Dip the strawberries into the chocolate. Then sprinkle or dip either the chocolate end or cheesecake end of the strawberries into the sprinkles, graham cracker crumbs, or nuts, if desired.
  • Place on a sheet pan lined with wax paper or a silicone baking sheet until the chocolate is cooled and hardened. Store in the refrigerator until serving.
