I love Rice Krispies treats and I am thrilled to be able to make a gluten-free version! Here are some reasons why I love these Oreo Rice Krispies treats:
- Gluten-free. This is a big one! When we stop eating gluten we sometimes have to give up our favorite dishes, which can be so disappointing. When I can recreate gluten-free versions of some of our beloved treats it makes everyone in my house happy.
- Very similar to the “original”. You’ll find a lot of the familiar characteristics of “regular” Rice Krispies treats in this gluten-free Oreo Rice Krispies treats recipe. And while we have subbed Rice Krispies cereal for gluten-free rice cereal it tastes quite close to what you may remember of Rice Krispies treats.
- Great for school snacks. These treats are very packable and are wonderful tucked into school lunches or snack boxes.
- Short ingredients list. You need just 5 simple ingredients to make this recipe!
What You’ll Need
Just 5 ingredients go into these treats. Here’s a quick overview of everything you’ll need. Be sure to check the recipe card at the end of this post for the full ingredient amounts.
- Salted Butter: Or use 6 tablespoons unsalted butter plus ¼ teaspoon salt.
- Mini Marshmallows: Grab a package of Kraft Jet Puffed if you can.
- Vanilla Extract: Use pure vanilla extract for the best flavor.
- Crispy Rice Cereal: Don’t use Rice Krispies are they are not gluten-free! Choose a certified gluten-free crispy rice cereal.
- Gluten-Free Oreos: You can buy these at the store or make your own.
How to Make Oreo Rice Krispies Treats
The method for making Oreo Rice Krispies treats is very similar to making regular Rice Krispies treats, but of course, you’ll add Oreo cookies! Check out my easy prep for cookies and cream Rice Krispies treats below:
- Prepare your baking pan. Line a 9×9-inch square baking pan with parchment paper or aluminum foil and grease it generously with cooking spray or butter. You can use a 9×13-inch baking pan, but your treats will be thinner.
- Melt the marshmallows. In a large, heavy-bottomed saucepan or Dutch oven, melt the butter over low heat. Set aside 1 cup of the marshmallows, and add the remaining 7 cups to the melted butter. Stir over low to medium-low heat until just melted (it’s fine if a few unmelted marshmallows remain). Remove from the heat and stir in the vanilla extract (plus the salt if you use unsalted butter).
- Stir in the other ingredients. Add the cereal and Oreos and gently stir with a spatula until the cereal is evenly coated. Then stir in the reserved 1 cup of marshmallows.
- Transfer to the pan. Transfer the mixture to the prepared baking dish and gently press down with your fingers to spread it out and fill the pan, but do not pack it down tightly. If you set aside some of the Oreo pieces, gently press them into the top of the treats.
- Cool. Let cool at room temperature for at least 30 minutes, then cut into squares and enjoy.
Tips for Success
Here are a few suggestions if you want to make this homemade Rice Krispies treats recipe dairy-free or vegan (hint: it’s not hard to adapt them!):
- Make it dairy-free. If you want to make this recipe dairy-free, substitute your favorite non-dairy butter for the butter (make sure it’s salted as this helps keep the treats tasting fresh longer).
- Go vegan. Technically, marshmallows are not vegan. If you wish to make a vegan version of these homemade rice krispies treats, use a bag of labeled vegan marshmallows. Just substitute for the mini marshmallows by weight to make sure the treats turn out the same.
- Don’t use Kellogg’s Rice Krispies! I mentioned this above but it’s worth repeating: the big blue box of Kellogg’s Rice Krispies treats is not gluten-free! See my post Are Rice Krispies Gluten Free? for more.
- Check the marshmallows’ ingredients list. If you’re worried about marshmallows, you can rest easy knowing that most marshmallows are gluten-free. But it’s always a good idea to check the ingredients list first, and you can use my post on “Are Marshmallows Gluten-Free?” to help guide you through choosing the right marshmallows to buy. If you have any leftover you can save them to make gluten-free s’mores.
- Leave out the Oreos. If you want to make more traditional Rice Krispies treats simply leave out the gluten-free Oreos.
- Throw in other add-ins. You can add even more to these treats! Try some mini chocolate chips, mini M&Ms, chopped nuts, or anything else you can think of.
How to Store Homemade Rice Krispies Treats
Store oreo rice krispies treats in an airtight container or zip-top bag at room temperature for up to 7 days. To pack up for lunch, wrap each treat in plastic wrap.
