Luckily, this easy Greek yogurt sherry vinaigrette knocks ’em out of the park! Made with just four simple ingredients, this light and creamy dressing is a must-add to your collection. - Plain Greek yogurt – That’s where the creaminess comes from! I often full-fat Greek yogurt for the best texture, but you can try something lower-fat if you prefer. I’ve even made it with nonfat yogurt.
- Sherry vinegar – If you can find one with a D.O.P. seal (Denominación de Origen Protegida) guaranteeing it’s from Spain’s Jerez region, that’s your golden ticket to the best flavor.
- Olive oil – Look for a young extra virgin olive oil for the best flavor.
- Dijon mustard – The smoother the better, like Grey Poupon. Some Dijons are a bit grainier than others. You don’t want that here.
- Salt & pepper – To taste.

- Use a high-quality sherry vinegar. The vinegar is the star of the show here, and not all sherry vinegars are created equal. A quality product will offer a nuanced flavor and balanced acidity that a cheaper alternative can’t match. Check for the D.O.P. seal (Denominación de Origen Protegida) on the label, guaranteeing it’s from Spain’s Jerez region, for the best flavor.
- DON’T blend. I highly suggest shaking or whisking this dressing to emulsify. While using a blender might seem quicker (it is, but not by much), shaking or whisking takes very little time and prevents the olive oil from turning bitter.
- Season to taste. It’s so important to taste this sherry vinaigrette before serving. Everyone’s taste buds are different, and you might want a little more (or a little less) salt and/or pepper. You can also add a bit more sherry vinegar if you want more acidity or a bit more oil if you want less.
How to Store
Seal any leftover dressing in an airtight container (a mason jar would be ideal) and keep it in the fridge for up to one week. Give it a good shake before using, as this dressing will thicken and separate in the fridge.
I don’t recommend freezing this vinaigrette. It won’t thaw well.
