Peanut Butter Butterscotch Popcorn

Peanut Butter Butterscotch Popcorn is caramel popcorn with peanut butter - because peanut butter makes everything better!

  • 1/2 stick butter
  • 1/2 cup light brown sugar
  • 1/2 cup cream
  • pinch of salt
  • splash of vanilla

1/4 cup peanut butter (I use homemade - like this one)

    1/4 popcorn kernels (unpopped)


      Pop the popcorn. I like to air pop mine, but microwave or oil popped is good too.

        Make the butterscotch:

        • Melt butter over medium high heat in heavy bottomed sauce pan.
        • Stir in brown sugar until smooth and melted (2-3min).
        • Pour the cream and mix it in.
        • Reduce heat and let simmer for 10-12 minutes.
        • Remove from heat. Add vanilla and salt.

        Add the peanut butter to the warm butterscotch and mix until smooth.

          Add the butterscotch mixture to the popcorn and mix till all kernels are coated.

            Now the choice is yours - eat it all right away (let's call this the preferable choice), or lay it out on a cookie sheet, let dry, and enjoy it later.
