Funky Monkey Banana Chocolate Peanut Butter Energy Balls
Your favorite sweet treat flavors in a fast and easy healthy no bake snack.
Servings 12 servings
- 1/2 cup creamy peanut butter
- 1 large very ripe banana
- 1/2 cup pitted dates
- 3/4 cup uncooked oats gluten free, if needed, more if needed
- ¼ cup ground flax seed or flax meal
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon Kosher salt
- 1/4 cup mini chocolate chips vegan, if needed
Combine all of the ingredients except the chocolate chips in a food processor and process until it forms a paste, scraping down the sides as needed. If you find the mixture is too soft to form into balls, you can add more oats.
Stir in the chips.
Using about a tablespoon of the mixture at a time, use your hands to roll into balls.
Store in the refrigerator until ready to eat.
