Lemon Blueberry Chia Seed Vinaigrette Salad Dressing
Fresh and fruity, and adds some zing to your salads. Also makes a tasty marinade for chicken.

- 1 cup blueberries
- 1/2 cup freshly squeezed lemon juice
- 1/4 cup olive oil
- 1 Tablespoon honey maple syrup, or agave nectar
- salt and pepper to taste
- 1 Tablespoon chia seeds
Combine blueberries, lemon juice, olive oil and honey (or maple syrup or agave) in your Blendtec or other blender, and blend on medium-low speed until smooth.
Season to taste with salt and pepper, and stir in chia seeds. If planning to store in the refrigerator for a few days, you may want to use less chia seeds, or add just before serving or it may thicken too much.
