Lemon Blueberry Chia Seed Vinaigrette Salad Dressing

Fresh and fruity, and adds some zing to your salads. Also makes a tasty marinade for chicken.

  • 1 cup blueberries
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 1 Tablespoon honey maple syrup, or agave nectar
  • salt and pepper to taste
  • 1 Tablespoon chia seeds


  • Combine blueberries, lemon juice, olive oil and honey (or maple syrup or agave) in your Blendtec or other blender, and blend on medium-low speed until smooth.
  • Season to taste with salt and pepper, and stir in chia seeds. If planning to store in the refrigerator for a few days, you may want to use less chia seeds, or add just before serving or it may thicken too much.
