Tzatziki is a simple Greek yogurt sauce that is light and refreshing while at the same time being rich and creamy. Spoon it over simple grilled chicken or seafood or roated vegetables. Serve with Greek dishes. Or enjoy as a dip for veggies.
Peel and shred the cucumber. Sprinkle with salt and place it in paper towels over abowl to drain
In a bowl, stir together the Greek yogurt, garlic, olive oil, lemon juice, and dill.
Squeeze the liquid out of the cucumber and add to the bowl.
Stir the cucumber into the yogurt mixture.
Refrigerate until ready to enjoy with veggies, pita, Greek dishes, grilled meats and veggies, and more.
