After you've given the shrimp a quick saute, just pour the sauce over them and it thickens and coats them instantly. It doesn't need a long cooking time to infuse plenty of flavor.
Stir the soy sauce, water, rice wine vinegar, light brown sugar, honey, sesame oil, garlic, ginger, and cornstarch together. Set aside.
Saute the shrimp for a minute or two on each side until they are just pink.
Pour the sauce over the shrimp and toss to coat.
Let it cook for another couple of minutes until the teriyaki sauce is thickened.
You can garnish the shrimp with sesame seeds, scallions, and shredded carrots.
Spoon the shrimp over rice, cauliflower rice, or noodles. Add a side of your favorite veggies.
