Rocky road brownies are made with an easy one-bowl brownie recipe, a layer of gooey marshmallows, and smooth chocolate frosting! They're a rich, dream-like dessert.
To start, in a large bowl, use an electric mixer to combine the butter, sugar, and cocoa powder. Add the eggs one at a time, blending after each one.
Next, reduce the mixer speed to low, and stir in the flour, salt, and vanilla. Then, use a spatula to mix in the walnuts.
Pour the brownie batter into your prepared pan, and bake for 30-35 minutes.
Sprinkle the mini marshmallows on top of the brownies and place the pan back in the oven for 4 minutes.
While the brownies are cooling, start on the frosting. Blend together butter, powdered sugar, cocoa powder, milk, and vanilla in a large bowl.
When the brownies have cooled, go ahead and spread the frosting over the layer of marshmallows.
Let the brownies chill in the fridge for a few hours so that they can set before you cut into them. (It's the hardest part, I know!) Then, slice them into squares and enjoy!
