Instant Pot Pinto Beans

Can you really make pinto beans without soaking?

In a word, YES! Dried beans cook up perfectly in the pressure cooker, even without soaking. This makes it a simple option for last-minute meal ideas. Serve this healthy side dish with your favorite tacos or enchiladas, spoon them on nachos or rice bowls, and so much more!

Prep the Beans

Rinse and drain the pinto beans, remove any small pebbles that may be present, and set them aside.

Saute the Aromatics

Set the Instant Pot to Saute and add the oil and onion, and cook until tender and translucent. Add the garlic and cook for another minute or two.

Add the Beans and Spices

Add the beans to the Instant Pot, followed by the chili powder, cumin, salt, and pepper, as well as the bay leaf.

Add the Liquids

Pour the broth and water over the beans. Make sure it comes about 1 inch over the top of the beans. Stir to combine.

Cook the Beans

Close the lid and the vent, and set it to cook on Manual for 50 minutes. It will take the Instant Pot about 8-10 minutes to come to pressure.

Vent and Season

When the cooking time is complete, let the pressure relase natrually for 15 minutes before manually venting. Adjust seasoning with salt and pepper.

Garnish and Serve

Garnish with cilantro and chopped onion, if desired, befiore serving.
