Roasting sweet potatoes instead of boiling gives them a caramelized flavor that doesn't get watered down. Plus, flavoring them with butter and real maple syrup will make a big difference in the flavor of the dish. It enhances and complements the natural sweetness.
Wash and dry the sweet potatoes, and prick with a fork.
Bake at 400°F for 45-55 minutes, or until you can easily pierce with a fork. Slice open and scoop out the flesh.
Add the butter, milk, maple syrup, and cinnamon to the sweet potatoes in a bowl.
Beat the potatoes with an electric hand mixer or mash with a potato masher until smooth.
Season to taste with salt and pepper. Top with a pat of butter, and/or a sprinkle of pepper or fresh thyme.
Scoop onto a plate and serve with a holiday meal or weeknight dinner.
