Vodka sauce is similar to a tomato cream or pink sauce, but with something extra - vodka! Vodka helps emulsify the tomato sauce with the butter, cream, and cheese for a smooth and decadent sauce.. The alcohol evaporates, but it intensifies and balances out the delicious flavors.
Melt the butter, then add the vodka and red pepper flakes. Bring to a simmer and cook out the alcohol.
Add a can of crushed tomatoes, bring it to a simmer, and cook until slightly thickened.
Stir in the cream and cook to heat through, but don’t let it boil.
Stir in the Parmesan cheese, and let it warm throgh just until the cheese melts and the sauce is smooth.
Serve with penne to make the classic penne alla vodka or use your favorite pasta shape, or even spaghetti squash or zoodles.
