Like all coleslaw recipes, this one contains shredded cabbage. But the addition of pineapple and macadamia nuts gives it a sweet and savory tropical twist. Plus it has no mayo! The light dressing is made with Greek yogurt to keep it creamy but make it healthy.
Stir the yogurt, pineapple juice, apple cider vinegar, Dijon mustard, salt, and pepper together in a small bowl.
Add the coleslaw mix, pineapple tidbits, and chopped macadamia nuts to a mixing bowl. Pour the dressing on top of it all.
Use tongs or a spatula to toss everything together until it is evenly coated.
Serve it right away or store in the refrigerator until you are ready to enjoy.
