Gluten Free Strawberry Icebox Cake

Why is it called icebox cake?

Icebox cake is made by layering cookies, whipped cream, and fruit. It is popped into the refrigerator, or icebox, so the cookies can soften and the layers blend into one dreamy dessert you can slice like a cake. Some versions add pudding, as well nbt this one keeps it classic with just pillowy whipped cream.

Make the Whipped Cream

Whip the cream with powdered sugar and vanilla to form soft peaks.

Start the Layers

Apread whipped cream in the bottom of a pan, then add a layer of gluten free graham crackers and more whipped cream.

Add the Berries

Make one layer of strawberries, then two more layers of graham crackers, whipped cream, and berries.

Refrigerate the Cake

After adding the final layer of cream and berries, cover the cake and put it in the refrigerator for at least 4 hours.

Slice and Serve

After it has been well-chilled, you can simply cut pieces and serve. Enjoy!
