Gluten Free Protein Pancakes

Do protein pancakes keep you full?

Yes, with plenty of fiber plus an extra dose of protein from oats, eggs, and the real powerhouse, protein powder, these pancakes are so satisfying. You definitely won't be hungry until lunchtime! And you can even add toppings to make them more filling!

Make Oat Flour

Place the oats in a blender and process to form a flour.

Combine Dry Ingredients

Combine the oat flour with the other dry ingredients and whisk them together in a large bowl.

Combine Wet Ingredients

In another bowl, whisk mashed banana, eggs, and milk.

Make the Batter

Add the wet ingredients to the dry ones and gently fold together.

Let it Rest

Rest the batter for 5 minutes while you preheat the skillet or griddle. Brush the heated surface with oil or butter.

Cook the Pancakes

Scoop 1/4 cup portions onto the preheated surface. Cook until you see bubbles, then flip and cook for another 1-2 minutes.

Top and Serve

Add your favorite pancake toppings and enjoy!
