These super chocolatey protein brownies are packed with filled with oatmeal, chocolate chips, peanut butter, honey, and coconut with a similar flavor to my No Bake Oatmeal Cookies. You’ll love this recipe because a good protein brownie recipe without protein powder is hard to find.
Heat the oven and prepare a baking pan.
Blend the peanut butter, honey, oil, eggs, and vanilla extract.
Now whisk together the oat flour, cocoa powder, baking soda, and salt.
Add the wet mixture to the dry, mix to combine, then fold in the oats, chocolate, and coconut.
Cook about 2-3 minutes and then flip and cook the other side until golden brown. Repeat with remaining batter.
Let brownies cool, then cut them into squares.
