Gluten Free Pizza Dough

What kind of gluten free flour should I use?

This recipe works well with a 1:1 baking blend that contains xanthan gum, such as Bob's Red Mill 1-to-1. It also bakes up perfectly using King Arthur Flour All-Purpose Gluten Free Flour, but add a teaspoon of xanthan gum.

Proof the Yeast

Stir the warm water and instant dry yeast together and let it become foamy.

Combine Dry Ingredients

Whisk together the flour, salt, sugar and baking soda.

Add Wet Ingredients

Using a wooden spoon, make a well in the middle of the dry ingredients. Pour in the yeast mixture and the olive oil.

Stir Dough Together

Mix together, stirring well to form a smooth dough.

Shape Crust

Transfer dough to a parchment-lined baking sheet and press into a thin, even 10-inch circle, or a couple of smaller 5-inch circles.

Par-Bake

Pre-bake the crust for 8-10 minutes, until the top is dry and just starting to brown. Add your toppings and bake for another 10-15 minutes.
