Dissolve honey in warm water and sprinkle the yeat on top. Let it sit until frothy.
Add the dough ingredients to the bowl of a stand mixer and pour in the yeast mixture.
Using the paddle attachment, slowly increase the mixer speed and mix for 5 minutes until it's sticky but not wet.
Scoop the dough into 8 patties, using greased 4-inch dough rings if you have them.
Put them somewhere warm to rise for 30-60 minutes.
Brush the tops of the buns with melted butter and sprinkle with sesame seeds if you like. Bake at 350°F for 25-50 minutes.
