Gluten Free Blueberry Muffins

Are fresh or frozen blueberries better for muffins?

When in season, fresh is always best. But you can use frozen. Just keep them frozen and toss them in a bit of flour before adding them to the batter.

Combine Wet Ingredients

Whisk sugar, eggs, oil, milk and vanilla extract together in a bowl.

Add Other Ingredients

Add the flour, baking powder and yogurt and whisk until just combined.

Fold in Blueberries

Gently fold in blueberries, and do not overmix.

Fill the Pan

Fill a 12-cup muffin with papaer liners that have been coated with cooking spray. Sprinkle with brown sugar.

Bake the Muffins

Bake at 375°F for 20-25 minutes. Enjoy!
