The essential ingredients for traditional hummus are chickpeas, lemon juice, and garlic. This recipe adds tahini and olive oil to make it extra smooth with a nice, rich flavor. It also has cumin for a hint of smoky flavor, but feel free to season it any way you like!
Add canned chickpeas to a saucepan with water. Boil them for 20 minutes to make them soft. Drain and dry.
Process garlic with lemon juice for the best, less harsh flavor.
Add the tahini and water, and blend until smooth.
Now add the drained chickpeas, olive oil, salt, and cumin. Process until smooth and creamy.
Transfer the hummus to a bowl and smooth out the top. Make grooves to hold the garnishes.
Add a squeeze of lemon juice and a drizzle of olive oil. Garnish with chickpeas, sesame seeds, and cilantro, if desired.
Scoop up hummus with pita or veggies, smear it on a sandwich, spoon over a grain bowl or salad, and so much more.
