INGREDIENTS  1 1/2 cups 1-to-1 gluten-free flour blend 1/2 cup oat flour 1 Tablespoon cocoa powder 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 3/4 cup granulated sugar 3 large eggs 1/2 cup vegetable oil, sunflower oil or coconut oil 1/2 cup buttermilk 1 Tablespoon red gel coloring Cream Cheese Frosting or your favorite frosting

PREPARE FOR BAKING

Preheat the oven to 350°F. Line a 12-cup standard muffin tin with liners.

COMBINE DRY INGREDIENTS

Combine the gluten free flour, oat flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl and whisk together. Set aside.

COMBINE WET INGREDIENTS

Combine the sugar, eggs, buttermilk, and oil in a large bowl. Using an electric mixer, beat until combined and smooth.

COLOR THE BATTER

Blend in the red food coloring.

COMBINE WET & DRY

Add the dry ingredients to the wet ingredients and stir until evenly combined.

FILL THE CUPCAKE PAN

Divide the batter between the prepared cupcake liners. Fill each about 3/4 full.

BAKE THE CUPCAKES

Bake the cupcakes for 20 to 25 minutes, or until a toothpick in the center comes out mostly clean.

LET THEM COOL

Remove the pan from the oven and let the cupcakes cool completely before frosting.

FROST THE CUPCAKES

Frost with cream cheese frosting or your favorite.
