A sweet and creamy strawberry cheesecake filling rolled up into a morning favorite, these make an elegant brunch for Mom or a fun breakfast for the kids. Add a little Greek yogurt cream cheese drizzle, and everyone will be running to the table for Strawberry Cheesecake French Toast Roll-Ups.
Strawberry Cheesecake French Toast Roll-Ups
I miiiiiight have mentioned that a certain little boy turned 4 years old the other day. And guess what a certain little boy got for his birthday breakfast. Of course when I that I was making him a special birthday breakfast, he said, “Is it chocolate and peanut butter?” Geez! No respect or appreciation!
This is the first year I did the whole birthday breakfast, special dinner request thing. His first birthday, well, he was one and didn’t have enough words in his vocabulary or epicurean preferences to make any special requests. For his second birthday, I had the idea of taking a 2 year old for his favorite Mexican food on Cinco de Mayo. Brilliant… or not so much! Last year we had his little party on his birthday and by the time that was done and some family came over, pretty much all I was up for was ordering pizza. Remember, I had a 6 week old at the time. I was kind of delirious.
This year we weren’t planning to have a party, and several weeks ago he requested eggs, fruit salad and English muffins. For dinner. Yes, we are a breakfast for dinner kind of family. But I still wanted to make actual breakfast something special. Heck, since we weren’t having a party, I tried to make the entire weekend special. So special, in fact, that I was up way too late on Saturday night making homemade ice cream and prepping a few other things after a long day at Sesame Place, so I couldn’t drag myself out of bed early on Sunday. The poor kid woke up before me, was reading quietly in his bed, and then I had the nerve to make him wait for his birthday breakfast so I could make these.
I think they were with the wait…
After seeing Carla’s Apple Butter French Toast Roll-Ups, and being inspired to make Cookie Butter French Toast Roll-Ups, I’m kind of obsessed with French Toast Roll-Ups. And it’s funny because with my wheat allergy and eating mostly gluten free, I can’t even eat them since the gluten free breads I’ve tried don’t seem to lend them selves to rolling. But they are so much fun, and they store and reheat well to pull out for a breakfast surprise (my boys eat yogurt with fruit most days, so this is a real treat), or to stick in a lunchbox.
And these Strawberry Cheesecake French Toast Roll-Ups were a huge hit with my boys. They loved the sweet, creamy filling bursting with juicy berries. After baking up nice and crisp, they were rolled in some Dixie Crystals Cinnamon Sugar (or just make your own mixture of cinnamon and sugar), and topped with (or dunked in) some Greek yogurt cream cheese drizzle for a little extra tangy cheesecake flavor!

Strawberry Cheesecake French Toast Roll-Ups for #BrunchWeek (#Giveaway)
Ingredients
For the French Toast Roll-Ups:
- 12 slices sandwich bread I used whole wheat
- 4 oz. cream cheese at room temperature (I used light cream cheese)
- 1/4 cup powdered sugar
- 1 cup finely chopped strawberries
- 2 eggs
- 1/4 cup milk
- 2 teaspoons vanilla
- 2 Tbsp melted butter
- 2 Tbsp Dixie Cinnamon Sugar or 2 Tbsp granulated sugar plus 1/2 tsp cinnamon
For the Greek Yogurt Cream Cheese Drizzle:
- ½ cup plain Greek yogurt
- 2 oz. cream cheese at room temperature (I used light cream cheese)
- 2 Tbsp powdered sugar
- 1 tsp vanilla
- 1/4 cup milk
Instructions
For the French Toast Roll-Ups:
- Preheat oven to 375°F and line a baking sheet with a silicone mat or parchment paper.
- Combine the cream cheese and powdered sugar in a small bowl and stir until smooth.
- Using a rolling pin, flatten each slice of bread.
- Evenly spread about 1 Tbsp of the cream cheese mixture on top of each slice of bread and top with a scant tablespoon of the strawberries.
- Roll up tightly, setting seam side down.
- In a shallow bowl, beat together the egg, milk, and vanilla.
- Dip each roll up into the egg mixture to coat completely, shake off the excess, and place seam side down on the prepared baking sheet.
- Bake for 10 minutes, remove from the oven, and brush the top of each roll-up with melted butter. Flip the roll-ups and brush the other side with butter.
- Return the pan to the oven and bake for another 10 minutes.
- While the roll-ups finish baking, place the cinnamon-sugar in a small bowl, or combine the sugar and cinnamon.
- Immediately after taking the roll-ups out of the oven, roll each one in the cinnamon sugar mixture.
- Drizzle with Greek Yogurt Cream Cheese Drizzle.
For the Greek Yogurt Cream Cheese Drizzle:
- Combine ingredients in a small bowl and stir to combine.

Really good! I made them for my fiancé and a friend. Though I had to improvise with what I had in my fridge. Instead of plain cream cheese I used strawberry due to lack of strawberries in my fridge.

Argh. I keep seeing amazing French Toast recipes everywhere all of a sudden, have only ever had the stuff once in my LIFE, and am now on a sudden change-up-boring-breakfast kick. The internet is being so good to me. Oh and they’re oven instead of frying pan? Even BETTER – no flipping and slipping and swearing and all the associated nonsense. It’s half 5 in the afternoon, but more importantly, I don’t currently have any veggie cream cheese in the fridge. Otherwise I seriously would be off making these right now, and think I will do at the soonest opportunity:D

Where have I been? I’ve never heard of French toast roll ups! But I know that my family would love them 🙂 So fun!
I’ve tried making french toast rollups once before but they didn’t turn out very well. I must retry with these!
