Pineapple Coconut Fool
Happy New Year Cupcake and Kale Chips readers! Hope its off to a great start for you all already. I am Shanna and I am the blogger, recipe creator and photographer of the blog, Pineapple and Coconut. I am all about healthy eats, the occasional sweet treat and a fun cocktail now and then too. My main focus and food philosophy is organics and the best quality ingredients I can get to make my recipes taste awesome.
Lots of people think my blog is ONLY Pineapple and or Coconut recipes, and it’s not. I like to make a wide variety, but they are my favorite ingredients. So today, I made a healthy dessert to start off the new year right, a pineapple coconut fool. I love fools – so easy to prepare and a much lighter dessert than all the cakes, cookies and pies of the recent holidays but still tastes decadent.

You can make pineapple coconut fool either traditionally, with heavy whipped cream, or vegan, using coconut whipped cream.
I included directions in the recipe notes for the coconut whipped cream. Its not as fluffy as traditional whipped cream but still just as delicious.
I am planning on lots more pineapple and coconut recipes this year on my blog and if I can pull it off an entire month of recipes hopefully this summer. I will have to get busy cooking and baking! Hope you enjoy this healthy dessert and have a wonderful new year. Happy 2015!!

Pineapple Coconut Fool Dessert
Ingredients
For the pineapple compote:
- 4 cups pineapple tidbits 1 medium pineapple, peeled cored and diced fine
- 3 Tablespoons coconut sugar
- 1 small lime juiced
For the whipped cream and serving:
- 1 cup whipped cream full fat heavy cream OR full fat coconut cream
- 1 teaspoon vanilla extract
- 2 teaspoons coconut sugar
- Toasted coconut flakes - optional
Instructions
For the pineapple compote:
- In a small saucepan over medium-high heat combine the pineapple, coconut sugar and lime and simmer until slightly thickened, almost jam like, about 15 minutes.
- Let cool completely then chill in an airtight container. The mixture will thicken up more once chilled
For the whipped cream and serving:
- When ready to serve prepare the whipped cream. Either using full fat heavy cream or coconut cream* whip until thickened, add in the vanilla and sweeten with coconut sugar until desired sweetness level is reached.
- In 4 parfait glasses or bowls layer the cream and pineapple mixture.
- Top with toasted coconut flakes and serve.
