Some of my favorite childhood memories took place around a campfire, always accompanied by s’mores! These gluten-free smores bars are choc full of nostalgia, not to mention a hefty amount of melted chocolate and gooey toasted marshmallows. Here’s why you’ll love them:

  • Gooey layers. These are a fun riff on Magic Bars made with chopped milk chocolate, mini marshmallows, and sweetened condensed milk layered over crunchy gluten-free graham cracker crust.
  • Flourless crust. Almond meal, butter, honey, and cinnamon combine to make a simple flourless crust that tastes like it was made with real graham crackers. It’s 100% gluten-free!

What You’ll Need

Let’s take a look at the short and sweet list of ingredients you’ll need to make these bars. I include some notes, too. Don’t forget to scroll down to the recipe card for a printable ingredients list.

  • Crust: I use a variation of my Gluten-Free Graham Cracker Crust made with almond meal in place of graham crackers, along with melted butter, honey, cinnamon, and salt. You can substitute the almond meal with gluten-free graham crackers if you prefer (try my homemade recipe!).
  • Sweetened Condensed Milk: Make sure you’re using sweetened condensed milk and not unsweetened evaporated milk.
  • Chocolate Bars: Hershey’s Milk Chocolate Bars are the classic choice for campfire s’mores. Note that the 1.5 oz size is the only Hershey’s chocolate bar that is gluten-free. You can also use another gluten-free chocolate bar or chocolate chips.
  • Mini Marshmallows: You can also use larger marshmallows and chop them up into smaller pieces.

How to Make Smores Bars

Here’s a quick step-by-step overview of this gooey smores bar recipe. Scroll to the recipe card for printable recipe instructions

  • Make the crust. Mix the melted butter, honey, salt, and cinnamon. Stir in the almond meal until you reach a sandy texture. Then, press the crust mixture firmly into the bottom of a lined 9×13-inch baking pan.
  • Add sweetened condensed milk. Spread some of the sweetened condensed milk evenly over the crust.
  • Add chocolate and marshmallows. Next, layer on your chopped chocolate and mini marshmallows. top this with a drizzle of the remaining sweetened condensed milk.
  • Bake. Bake the bars at 350ºF for 25-30 minutes, until the marshmallows are browned and toasty. Cool the bars completely before you slice them.

Tips for Success

Here are some tips for perfectly melty gluten-free smores bars:

  • Use the right ingredients. Sweetened condensed milk and evaporated milk both come in cans, and they’re often next to each other in the grocery store aisle. Make sure to double-check the label to ensure you have the right ingredient! This recipe won’t work with unsweetened condensed milk.
  • Line the pan. Lining the pan with parchment paper makes it easy to lift the cooled bars right from the pan. Not to mention, easy cleanup!
  • Check for doneness. These smores bars are done when the marshmallows are a puffed, golden brown.
  • Get clean slices. Melted marshmallows are extra sticky! For clean cuts when slicing, run a sharp knife under warm water and wipe the blade clean between slices.

Easy Variations

These are some quick and easy smores bar variation ideas that you can try:

  • Different crust. To make this dessert even more chocolatey, borrow the gluten-free Oreo crust from my Chocolate Cheesecake recipe. Or, make your own using Homemade Gluten-Free Oreos!
  • Use marshmallow creme. In place of mini marshmallows, dollop over marshmallow fluff instead.
  • Different candy bars. Change up the chocolate bars for chopped peanut butter cups, or more of your favorite gluten-free candy bars.

How to Store

  • To Store. Store these smores bars in an airtight container on the counter for up to 4 days. I like to warm these bars in the microwave for a few seconds to freshen them up for serving.
  • Freeze. Wrap the bars in a double layer of plastic wrap and freeze them for up to 3 months. Defrost the smores bars at room temperature before reheating and/or serving.

Gluten Free Smores Bars

These gluten free smores bars turn your favorite campfire treat into a gooey chocolate-and-marshmallow-filled magic bar with a buttery graham cracker crust!

Ingredients

  • 5 Tablespoons melted butter
  • 3 Tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups almond meal lightly packed
  • 14.5 ounces sweetened condensed milk
  • 4 1.5 oz size Hershey’s Milk Chocolate Bars* coarsely chopped
  • 1 1/2 cups mini marshmallows

Instructions

  • Preheat your oven to 350°F and line a 9×13 inch pan with parchment paper.
  • In a large bowl, stir together the melted butter, honey, salt, and cinnamon, then stir in the almond meal until well-mixed and moist.
  • Pour the crust mixture into the lined pan and press down firmly to form an even, tightly packed layer.
  • Pour about three-quarters of the sweetened condensed milk over the crust layer, and spread evenly.
  • Sprinkle with the chocolate and marshmallows, then drizzle with the remaining sweetened condensed milk.
  • Bake for 25 – 30 minutes or until the marshmallows are lightly browned.
  • Let the pan cool completely before you cut the dessert into bars.

Notes

*The only size of Hershey chocolate bars that are gluten free are the 1.5 oz size. Otherwise, use 1 cup gluten free milk chocolate chips or 6 oz. chopped milk chocolate
