Well we did it. For better or for worse, the first day of school is now behind us. There were some highlights and some lowlights, it was crazy, exciting, even a little peaceful for this mama who has had a crazy busy summer with two crazy busy boys, but it had shed some light on the fact that life as we know it is never going to be the same.

This morning when I left Little Dude, he was having a complete meltdown. Luckily later in the morning his teacher sent me some photos of him smiling and playing, and when I pick him up she told me that his crying fit lasted about two or three minutes, and the rest of the day he was all smiles.

The Bug was running down the block ahead of The Hubby and I, and met one of his classmates at the bus stop, but got a little hesitant and clasped my hand a bit tighter as the bus approached. I choked back some tears as I pulled my hand away and watched him climb the steps on to the bus, and again as I saw him emerge from the bus in the afternoon, but I kept it in check. It’s a good thing I did, because I think he needed me to be strong.

“How was your day?”

“Pretty awesome.” Although his tone was a bit more reserved than, say, the theme song to The Lego Movie.

“That’s good”

“I did want to cry a little, but I kept it in.” (You guys, I die.)

“Why did you want to cry, baby?”

“Because I missed you so much.”

“Oh, thank you. I missed you too. What was the best part of your day?”

“Coming home to you, mommy.”

Well, he’s lying because really I think it was coming home to his Star Wars toys, but whatever, I’ll just pretend he meant it and allow my heart to melt a little. And let’s keep it real, I think what he really missed was the relative freedom of being at home, even under the rule of this fairly strict mama, versus the structure of a school day. Because I may not let him run the show, but it’s not like he has to sit still too often, and he can play with his toys in his way pretty much whenever he wants.

So we’ll just go with it – he adores his mama. Well, until he wouldn’t cooperate and I almost had to take away his book at bedtime and threw a complete fit, but I’ll chalk that up to sheer exhaustion after an eventful day.

And now we do it all over again tomorrow. And the next day. And the next. But we can look ahead to Friday, which is not only the end of what I am sure will be an extremely exhausting week for all of us, but it’s also National Macadamia Nut Day. So clearly this easy cookie dough dip recipe, which has been living in my head for months now, had to be done…

Flourless White Chocolate Macadamia Nut Cookie Dough Dip

Flourless White Chocolate Macadamia Nut Cookie Dough Dip has a perfectly gooey, doughy texture, but absolutely no flour. I’m sure I am not surprising you with the secret (or not-so-secret) ingredient, because not only have I made plenty of chickpea cookie dough recipes, but so has pretty much everyone else out there on the interwebs. And somebody has probably done this version, but I’m going to just avoid Googling it, plead ignorance, and share my version.

Which happens to be naturally gluten free, vegan-friendly, and other than the sugar in the white chocolate chips (which if you want to seek out vegan and/or sugar-free ones, go for it), is only sweetened with honey and a good dose of vanilla. I used coconut oil, which made the dough a bit softer until I threw it in the fridge, and added just a hint of coconut flavor which I totally loved, but you can also stick with butter to keep it a bit more in line with the traditional white chocolate macadamia nut cookie. But you guys, serious yum factor here. Plus it takes, like, seconds to make, especially when I toss everything into my Blendtec.

To keep things gluten free and a little healthier, I’m kind of partial to dipping apple slices, or spreading it on bananas, but my kiddos love graham crackers. Cookie dough on cookies – double your pleasure.

Flourless White Chocolate Macadamia Nut Cookie Dough Dip

An egg-free, gluten-free (and even easy-to-make vegan) cookie dough that makes a healthy snack.
Prep: 5 minutes
Total: 5 minutes

Ingredients

  • 15 oz canned chickpeas rinsed, drained, and dried on a paper towel
  • 2 Tablespoons coconut oil or unsalted butter, softened
  • 2 Tablespoons honey agave, or maple syrup
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • ½ cup white chocolate chips reserve about a tablespoon for sprinkling on top, if desired. I use Ghirardelli, but you can use vegan if needed
  • ½ cup chopped macadamia nuts reserve about a tablespoon for sprinkling on top, if desired
  • bananas apples, graham crackers, pretzels, etc. for dipping

Instructions

  • Place the chickpeas, coconut oil or butter, honey, vanilla, and salt into a food processor or high-powered blender (I used my Blendtec), and process until smooth.
  • Scoop the mixture into a bowl, add the white chocolate chips and macadamia nuts, and mix in completely.
  • Serve with bananas, apples, graham crackers, pretzels, etc. for dipping.

      Hi Allyson – The macadamia nuts get mixed in at the same time as the white chocolate chips. It’s mentioned in the second step of the instructions. I hope you enjoy the recipe!

        Thanks for the quick reply but…ingredients say reserve some to sprinkle…so are you saying actually ALL are sprinkled thus all are reserved vs a portion?

          Allyson, the recipe ingredients call for 1/2 cup of macadamia nuts, PLUS a couple of teaspoons worth to sprinkle on top. Mix the 1/2 cup of nuts in when you’re mixing in the chips, then sprinkle the 2 teaspoons worth on top at the end.
