Browned Butter Banana Nut Chocolate Chip Muffins
I am ready to petition for a new law. A tax law to be exact. Those that are self-employed get to deduct as a business expense all of the chocolate, wine, massages, pedicures, or anything else they need to cope with and or celebrate the completion of preparing their tax documentation. Can I get an “Amen”?
Now I know part of this is my fault. I know I need better recordkeeping systems. I know I need to be better organized. But seriously, the minutiae of being a freelancer who has eleventy billion income sources and fees for scheduling services and costs for equipment and supplies and expenses for travel – it’s overwhelming I’m sure regardless of how good or bad you are at keeping up with things all year long.
There are also services to help you with this, but some are expensive, and seriously, I just need a personal live-in bookkeeper and accountant to manage all of this. Sadly I do’t earn that much.
But I’m done with my part, I’ve turned it over to my accountant, and I then sit and remind myself that I make muffins for a living…
These Browned Butter Banana Nut Chocolate Chip Muffins are the perfect blend of rich, indulgent flavors with the nutty browned butter and smoky sweet maple syrup. But since those flavors are so bold, and you have the bananas to keep the muffins sweet and moist, you don’t need a lot of either, which leaves plenty of room to pack in lots of nutrition from flax seeds. They are also made entirely with whole wheat flour because the bananas and Greek yogurt ensure they are tender unlike some other whole wheat hockey pucks. And the crunchy bits of walnuts and little bursts of chocolate (my favorite tip – mini chocolate chips because a little goes a long way) make them irresistible.

Browned Butter Banana Nut Chocolate Chip Muffins
Ingredients
- 1/4 cup unsalted butter
- 1/2 cup chopped walnuts
- 3 overripe bananas
- ¼ cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup plain greek yogurt
- 1 large egg
- ½ teaspoon kosher salt
- 1 1/2 cups whole wheat flour
- 1/4 cup ground flax seed
- 1 teaspoon baking soda
- 1/4 cup mini chocolate chips
Instructions
- Preheat oven to 375°F and spray a 12-cup muffin tin with nonstick cooking spray or line with cupcake/muffin liners.
- In a small skillet over medium low heat, melt the butter and continue to cook until it turns a light golden brown. Add walnuts, toss and roast for a couple minutes. Pour off butter into a small bowl to cool slightly
- Add the bananas to a small bowl and mash with a fork until only a few small lumps are left.
- Add maple syrup, vanilla extract, greek yogurt, egg, salt, and reserved browned butter.
- Mix with a fork until just combined,
- Add flour, flax seed, and baking soda. Using a spatula, mix until wet and dry ingredients are jutst combined without overmixing.
- Gently fold in the mini chocolate chips.
- Fill each muffin tin about ¾ of the way full and bake for 15-17 minutes.
- Cool in the pan for about 10 minutes before removing to a wire rack to cool completely.
- These muffins are very moist, so if not eating them within a day or two, you will need to keep them in the refrigerator or freezer.

These muffins sound lovely!!! What a delicious little treat!
Great recipe! Many times when I spotted a recipe containing ripe or overripe bananas the one I had at home were surprisingly only yellow. Since I am quite impatient in the terms of fulfilling food temptations I searched for a way to ‘ripe’ bananas quickly. I put peeled unripe bananas in the oven and bake them for 10 minutes or until desired ripeness. It really works!
