So I rearranged my kitchen. I’ve been going through drawers and cabinets and the pantry, emptying them completely to clean right into the crevices, moving things around, organizing, seemingly making things better and more functional based on where I am when I make different meals, and when I want to reach for things like olive oil and balsamic vinegar versus chia seeds and cinnamon.

Somehow I thought it would be a good idea to consolidate all of the stuff the boys have as snacks into one cabinet that is low enough for them to reach. It’s right in the area where I usually make their breakfasts and lunches, so I can easily reach in to grab raisins or applesauce or granola bars to toss into their lunchboxes. And I figured that I wouldn’t then have to jump into service every time they neeeeeeedddd a snack. I mean, they are old enough to be able to grab something at snacktime.

Yeah, except now they think it’s always snacktime. Breakfast was a half hour ago? Yep, time for a snack. Mommy is in the middle making lunch? Of course it’s snacktime. Already had lunch and an afternoon snack? Time for another snack.

Luckily they know to ask me first before devouring, but that doesn’t mean they aren’t hanging on the cabinet doors, rummaging around, and choosing what their little hearts desire before running to ask if they can consume said snack. And when I tell them to go ahead and pick a few things to make a snack mix, they’re filling a giant bowl full of pretzels and cereal and mixed nuts and dried fruit and whatever else they can get their hands on.

But they’re growing boys, right?!

Well, I suppose it’s not so bad as long as I keep the snack cabinet filled with things like this…

Pineapple Coconut Granola

As I’ve mentioned before when I made Coconut Chia Granola Clusters, my kids want big pieces of granola to snack on while they are munching on their yogurt that’s been topped with the smaller bits and pieces. So I work with the basic formula of wet to dry ingredients and keep the same technique of forming a single layer on the pan, and not stirring or disturbing it so that you get some nice, big clusters. This time I took the idea of that coconutty granola and amped up the tropical factor by using banana for part of the wet ingredients (and to replace some of the added sugar), then sprinkled in plenty of coconut and dried pineapple when it was cool.

Silk now has a new dairy-free yogurt alternative that’s smooth and creamy and gets its 5-6 grams of protein per serving from almond butter! Silk is always my choice for dairy-free options because it’s gluten-free, cholesterol-free, and carrageenan free, but most importantly, it tastes delicious. This new Silk Almond is no exception. Pineapple Coconut Tropical Granola {vegan, dairy-free, gluten-free}

Add tropical flavor to breakfast with this sweet and crunchy, dairy-free, gluten-free, and vegan yogurt topping.
Prep: 10 minutes
Cook: 45 minutes
Total: 55 minutes

Ingredients

  • 3 cups old-fashioned rolled oats certified gluten free, if necessary
  • 1 cup slivered almonds
  • 1/4 cup chia seeds
  • 1/4 cup melted coconut oil
  • 1 large banana mashed
  • 1/4 cup coconut sugar or light brown sugar
  • 1/4 cup ground flax seeds
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract optional
  • 1 cup dried pineapple chopped
  • 1 cup unsweetened coconut flakes

Instructions

  • Preheat oven to 300°F and line a large baking sheet with parchment paper.
  • In a large bowl, toss together oats, almonds, and chia seeds.
  • In a separate bowl, whisk together oil, banana, coconut or brown sugar, flax seeds, salt, and vanilla until smooth.
  • Pour wet mixture over dry ingredients and stir until just moistened.
  • Spread the mixture evenly on the parchment-lined baking sheet and press flat.
  • Bake at 300°F for 35-45 minutes or until edges start to brown. Do not stir while baking or cooling. Remove from oven and let granola cool completely on the baking sheet.
  • Break granola into clusters and toss in dried pineapple and coconut flakes.
  • Store in an airtight container.
