Strawberries and Cream Frappe with Whipped Coconut Cream is just as pretty and yummy as all of those colorful drinks!

But (and it’s a big “but”) you have total control over all of the ingredients. Yes, all five of them. Because that’s all that goes into this creamy indulgence that really isn’t an indulgence at all – five simple ingredients. You’ve got a can of full fat coconut milk to make that whipped coconut cream topping and add a little creaminess to the frappe. There’s regular coconut milk, or really any kind of milk you choose. I just happen to like the flavor of the coconut milk in this strawberries and cream frappe, which gets accentuated by a little vanilla extract. Then of course you need the frozen berries.

But here’s the thing with frozen strawberries. When I make a smoothie with almost any other kind of fruit, the natural sweetness of the fruit is plenty sweet for me. Strawberries are a different story. Unless I buy and freeze nice, ripe, fresh berries, if I buy the already frozen kind, I always feel they need to be sweetened up a little. But if I’m making myself a nice, healthy drink, I don’t want to load it up with sugar.

Strawberries and Cream Frappe with Whipped Coconut Cream {dairy free}

A pretty in pink drink that will  satisfy your cravings for a sweet and creamy frosty beverage, but in a healthier alternative to the coffee shop versions.

Total: 10 minutes

Ingredients

  • 13.5 oz canned full fat coconut milk that has been in the refrigerator for at least several hours or overnight, divided
  • 1 cup frozen strawberries
  • 1 cup coconut milk the kind from a carton, or your milk of choice
  • 1/2 teaspoon Wholesome Organic Stevia divided, or two packets (equivalent to four teaspoons of sugar), or to taste
  • 3/4 teaspoon vanilla extract divided

Instructions

  • Remove can of coconut milk from the refrigerator, taking care not to shake it. Open carefully and scoop the thick, creamy portion of the canned full fat coconut milk into a chilled mixing bowl. Reserve remaining liquid for another use.
  • Measure out 1/4 cup of the coconut cream and set aside for making the frappe.
  • Add 1/4 teaspoon or one packet Wholesome Organic Stevia and 1/4 teaspoon vanilla to the coconut cream in the bowl. Using an electric mixer (the whisk attachment works well if you have one), beat on medium-high to high speed until soft peaks form. Do not overbeat. You can add back some of the reserved liquid from the can to achieve desired consistency, if desired. Place in the refrigerator until ready to use.
  • Add the strawberries, reserves 1/4 cup coconut cream, milk, 1/4 teaspoon or one packet Wholesome Organic Stevia, and 1/2 teaspoon vanilla extract to a blender. Blend until smooth.
  • Pour into two glasses and top each with the whipped coconut cream.

    This is my first time to try whipped coconut cream on a frappe. I am a bit excited and scared on how it’s going to turn out.

  2. Whipped Coconut Cream? Sign me up!
    I’ve tried a couple different brands of stevia and some of them are good and some have a funky aftertaste. I should try this brand.

  3. Now that the weather is warmer I get tempted by frappes. Love this recipe as now I can drink in excess without my blood sugar shooting over the roof!
