Peanut Butter and Jelly Parfaits with Greek Yogurt

My kids are like peanut butter and jelly – they are very different, but go well together. It’s been a great summer for these boys; however, the time has come for peanut butter and jelly to go back to school.

While much of the country has already headed back to school, here in Maryland the kids don’t start until after Labor Day. At this point, though, we are all summered out. There’s been several days of a lot of rain and the evenings are getting chillier, which means not only has the pool lost its novelty, but it’s also cold. Vacation was way back in May and our usual one or two trips to visit grandma near the beach are over. It’s time to get back to the routine.

But I kind of like being able to sleep till 6:30 (yes, that’s sleeping in at my house with my little earlybirds), still get my workout in, and get the kids up and off to camp (at the same place) in a fairly leisurely manner. Pretty soon it’s back to one preschool drop-off, one walk to the bus stop, and all of this earlier than we had to be at camp. Sure, camp requires lunches to be packed and sometimes bathing suits and towels, but now we will be back to making sure homework is completed and in folders, forms are filled out, library books are remembered, and let’s not forget evenings of Cub Scouts, sports, PTA meetings, and religious education.

So what are my tricks for keeping it all under control? It’s somewhere between having a plan and having no plan at all. Well, at least when it comes to packing lunches. What do I mean by that? I don’t necessarily plan out what the kids are going to take for lunch the entire week when I am making my menu plan and grocery list, I always make sure I have a good mix of our favorite staples on hand. The fridge and pantry are always filled with our:

  • Favorite veggies – cucumbers, carrots, frozen mixed veggies, sugar snap peas
  • Tons of fruit – bananas, apples, grapes, and even fruit cups and frozen berries
  • Proteins – deli meat, leftover chicken, hard boiled eggs, roasted chickpeas
  • Storebought and homemade snacks – crackers, healthy no-bake snacks like Cinnamon Caramel Apple Energy Balls and No-Bake Apricot Chia Energy Bars, and popcorn
  • Plenty of nuts and dried fruit – cashews, sunflower seeds, raisins, figs, and more to make trail mixes or cream cheese stuffed dates
  • “Sandwich holders” – bread, mini bagels, wraps, even lettuce leaves to make lettuce wraps
  • Pantry ingredients to make dressings and dips like this Honey Mustard Dip

My other tip is that I always always always pack lunches at night. Sometimes I get motivated and on Sunday I’ll even pack an entire week’s worth of lunches, much to the frustration of my husband when he is trying to put the milk back in the refrigerator and it’s stocked with containers of various shapes and sizes, ready to be grabbed on a crazy morning and tucked into a lunchbox. But every evening, usually while I am making dinner I open up the fridge and mix and match, because that’s when old favorites get more creative.

Peanut Butter and Jelly Yogurt Parfaits

A fun way to enjoy peanut butter and jelly for breakfast or a snack, with layers of yogurt, strawberries, peanut butter, jelly, and PB&J granola.

Total: 1 hour 15 minutes

Ingredients

For the Peanut Butter and Jelly Granola

  • 3 cups old fashioned oats gluten free, if necessary
  • 1 cup Jif Natural Creamy Peanut Butter
  • 1/2 cup honey
  • 1/4 teaspoon salt
  • 1/2 cup chopped roasted and salted peanuts
  • 1 cup freeze dried strawberries

For each Peanut Butter and Jelly Yogurt Parfait

  • 1/2 cup vanilla Greek yogurt
  • 1/4 cup sliced strawberries
  • 1 Tablespoon Jif Natural Creamy Peanut Butter
  • 1 Tablespoon Smucker’s Natural Strawberry Spread
  • 1/4 cup Peanut Butter and Jelly Granola

Instructions

For the Peanut Butter and Jelly Granola:

  • Preheat oven to 275°F and line a sheet pan with parchment or a silicone baking sheet.
  • Place the oats in a large mixing bowl.
  • Stir together the Jif Natural Creamy Peanut Butter, honey, and salt in a small, microwave safe bowl. Microwave for about 30 seconds or until you can stir it into a smooth mixture.
  • Pour the peanut butter mixture over the oats and stir until completely coated.
  • Spread in a single layer on the sheet pan, and press down.
  • Bake for 30 minutes, then stir gently without breaking up all of the large pieces. Spread into a single layer.
  • Bake for another 20-30 minutes, gently stirring and checking every 10 minutes until dried out and slightly crisp. It will become more crisp as it cools.
  • Cool on the pan until it reaches room temperature, then mix in the peanuts and freeze dried strawberries.
  • Store the granola in an airtight container.

For each Peanut Butter and Jelly Yogurt Parfait:

  • Place about half of the yogurt in the bottom of a jar or bowl. Top with half the strawberries, half a tablespoon Jif Natural Creamy Peanut Butter, half a tablespoon Smucker’s Natural Strawberry Spread, and about two tablespoons granola.
  • Repeat the layers and store in the refrigerator until ready to serve.
