When you just aren’t ready to say goodbye to summer, pile lots of late summer produce and leftover chicken on top of some salad greens for a light and cool dinner like this Peach, Tomato, Chicken and Blue Cheese Salad.
Peach, Tomato, Chicken and Blue Cheese Salad
All of you people looking for pumpkin and apple baked goods already, you’ve come to the wrong food blog. I just spent a week in Florida, and the only thing I am thinking about is Dole Whips and Blood Orange Margaritas. You guys, it was hot. I know, I know, we chose to go to Disney World in August, we should have expected this. And we did. We wore shorts and tank tops and tee shirts. We carried water bottles, which were refilled about six hundred and seventy two times a day. We brought cooling towels, and yes, even ponchos for those inevitable afternoon thunderstorms. But no matter how much you prepare, you have no idea how it’s going to hit you until you are actually there. And your two year old insists on being carried every second he is not in the stroller. And your five year old insists on being on the back of the sit and stand double stroller very second his little brother is also in there.
Now some people would counteract this by coming home, getting in the air conditioning, and breaking out the autumn ingredients, thinking this might help usher in the change of seasons. Not this mama. The Bug and I headed to the closest farm stand to pick up corn on the cob for dinner, and I made sure to grab some peaches and nectarines too. I want to enjoy them while we have them, because while apples and cans of pumpkin pretty much taste the same whenever you buy them, all that good summer stuff is only good, well, in the summer.
So BRING. IT. ON…
This Peach, Tomato, Chicken and Blue Cheese Salad has the perfect balance of sweet and salty, crisp and creamy, all doused with my absolute favorite salad dressing in the world my Creamy Greek Yogurt Maple Dijon Dressing that add a little bit of sharp tang. The creamy dressing plus the but of blue cheese make it feel rich and indulgent, the chicken makes it hearty and satisfying, but it’s really super light and fresh with all of those great veggies, and of course the tender and juicy peaches. This is pretty much late summer on a plate and I love every bite of it, as did The Hubby and the kiddos! Well, as expected, The Bug avoided the tomatoes and The Hubby skipped the cukes, but Little Dude and I devoured every bite. Yes, my crazy kids love blue cheese – go figure!
So let’s just make some salads and let summer last a little longer!

Peach, Tomato, Chicken and Blue Cheese Salad
Ingredients
- 4 cups Mixed salad greens
- 1 large cucumber peeled, quartered lengthwise, and sliced
- 2 plum tomatoes sliced into wedges
- 2 large peaches sliced
- 2 cups cooked and chopped chicken
- 1 cup blue cheese crumbles
- Creamy Greek Yogurt Maple Dijon Dressing or your favorite honey dijon salad dressing
Instructions
- Divide salad greens between four plates. Top each with about a quarter of the cucumbers, tomatoes, and peaches, and about half a cup of chicken. Sprinkle each with about a quarter cup blue cheese and drizzle with 1-2 Tablespoons salad dressing.
