My boys, like many kids, love Legos. As a matter of fact, I did too. But when I was little, you just bought a box of blocks. Sure, there were various shapes and sizes that you could assemble in different ways to your heart’s content, but the design and execution were completely on you. That being said, my creations were not very structurally sound or lifelike, but what I lacked in accuracy I made up for in creativity, which is what I thought was the whole idea behind toys for “unstructured play,” as they call it these days.

Fast forward to the present and the aisle in the store that houses the ubiquitous bricks is filled with box after box that contains the exact pieces you need to assemble the structure or creature on the box with step-by-step instructions. And they charge you a premium for these special kits. Of course my kids beg for the overpriced latest-favorite-character sets, bring them home, rip open the box, and…

FREESTYLE!

They ditch the instructions completely and make their own ships and vehicles. I swear, next time I’m just going to take advantage of my favorite 2-day shipping and order a box of plain ol’ bricks.

But that doesn’t mean you can’t enjoy your favorite toppings. Starting with the 4 Cheese Medley, you can keep it vegetarian by topping it with broccoli, tomatoes, and fresh mozzarella, with a little sprinkle of parmesan cheese. Or just lay on a few slices of chicken, then while it bakes, toss Romaine lettuce with your favorite storebought or homemade Caesar dressing, like my Greek Yogurt Caesar dressing. Pile the salad on top, sprinkle a little parmesan cheese and you have Chicken Caesar Salad pizza.

You can add some pineapple and cheddar cheese to the pepperoni pizza to make a little twist on the classic Hawaiian pizza. Or pile on salami, olives, roasted red peppers, fresh mozzarella and parmesan, then give it a drizzle of balsamic vinegar after baked for a super flavorful Antipasto pizza.

Easy Gluten-Free Family Pizza Night Recipes

Easy Gluten-Free Family Pizza Night Recipes will inspire you to think outside the box. Ingredients

For the Hawaiian Pizza

  • 1 Freschetta Gluten Free Thin & Crispy Pepperoni Pizza
  • 1/4 cup chopped pineapple fresh or from a can
  • 1/2 cup about 2 oz. shredded cheddar cheese

For the Antipasto Pizza

  • 1 Freschetta Gluten Free Thin & Crispy Pepperoni Pizza
  • 2 slices about 1/2 ounce salami, cut into thin strips
  • 1/4 cup olives green, kalamata, or a mix, sliced
  • 2 Tablespoons chopped roasted red peppers
  • 2 ounces fresh mozzarella thinly sliced
  • 2 Tablespoons grated parmesan cheese
  • 2 teaspoons balsamic vinegar reduction

For the Broccoli Tomato Pizza

  • 1 Freschetta Gluten Free Thin & Crispy 4 Cheese Medley Pizza
  • 1/2 cup steamed broccoli
  • 1/2 cup chopped tomatoes
  • 2 ounces fresh mozzarella thinly sliced
  • 2 Tablespoons grated parmesan cheese
  • freshly ground black pepper

For the Chicken Caesar Salad

  • 1 Freschetta Gluten Free Thin & Crispy 4 Cheese Medley Pizza
  • 1/2 cup cooked sliced chicken
  • 4 cups Romaine lettuce
  • 1/4 cup of your favorite Caesar dressing like this Greek Yogurt Caesar Dressing
  • 2 Tablespoons grated parmesan

Instructions

For the Hawaiian Pizza:

  • Place a pan on the bottom rack of your oven and preheat oven to 450°F.
  • Remove Freschetta Gluten Free Thin & Crispy Pepperoni Pizza from the film overwrap. Top with pineapple and cheddar cheese.
  • Bake for 12-16 minutes, or until cheese is melted and bottom of crust is golden brown. Remove from oven and let cool for 3 minutes before slicing.

For the Antipasto Pizza:

  • Place a pan on the bottom rack of your oven and preheat oven to 450°F.
  • Remove Freschetta Gluten Free Thin & Crispy Pepperoni Pizza from the film overwrap. Top with salami, olives, roasted red peppers, fresh mozzarella and parmesan cheese.
  • Bake for 12-16 minutes, or until cheese is melted and bottom of crust is golden brown. Remove from oven and let cool for 3 minutes before drizzling with balsamic and slicing.

For the Broccoli Tomato Pizza:

  • Place a pan on the bottom rack of your oven and preheat oven to 450°F.
  • Remove Freschetta Gluten Free Thin & Crispy 4 Cheese Medley Pizza from the film overwrap. Top with broccoli, tomatoes, fresh mozzarella, parmesan cheese and pepper.
  • Bake for 12-16 minutes, or until cheese is melted and bottom of crust is golden brown. Remove from oven and let cool for 3 minutes before slicing.

For the Chicken Caesar Salad Pizza:

  • Place a pan on the bottom rack of your oven and preheat oven to 450°F.
  • Remove Freschetta Gluten Free Thin & Crispy 4 Cheese Medley Pizza from the film overwrap. Top with sliced chicken.
  • While it bakes, toss lettuce with Caesar dressing
  • Bake for 12-16 minutes, or until cheese is melted and bottom of crust is golden brown. Remove from oven and let cool for 3 minutes before topping with salad and parmesan cheese and slicing.
