Do you remember that succulent Slow-Cooker BBQ-Rubbed Turkey Breast I shared with you on Sunday? And that I told you I managed to get SIX meals out of it? For today’s #WeekdaySupper, I am sharing the first reinvention of those leftovers – Autumn Turkey & Apple Salad or Wraps, topped off with my Creamy Greek Yogurt Maple Dijon Dressing.
As part of #SundaySupper’s partnership with American Family Insurance, this week for #WeekdaySupper, five of us are taking the leftovers from our big meals and turning them into something new and fabulous… and EASY… for a quick and tasty dinner on those busy weeknights.
As a food blogger, I often plan menus and baking plans based on the season and upcoming event themes and sometimes products I am reviewing or just want to highlight. But that turkey breast I made, and today’s salads and wraps were never originally intended for the blog. Honestly, I had this turkey breast sitting in the freezer, some leftover BBQ rub in a tupperware, and I didn’t feel like putting much effort into dinner. Then a couple nights later, with piles of leftover turkey and a desperate need to go grocery shopping, I threw together these salads and wraps. But when The Hubby insisted that I must share these recipes on the blog, I had to oblige. I mean, he likes my cooking, but, I don’t know, maybe I have spoiled him (not to toot my own horn), because it isn’t often that he declares this without me asking if dinner is “blogworthy”.
Since I had turkey, I had to bring in some classic flavors of autumn with apples and cranberries. I love to pair apples with a nice sharp cheddar, and then walnuts add the perfect crunch. I had some Creamy Maple Dijon Dressing leftover, which I knew would be perfect, so no need to make another salad dressing.
I am partial to my salads, but the boys had theirs all wrapped up in a whole wheat tortilla, and this dinner disappeared fro our plates as quickly as it came together.

When you have nothing planned or prepared, what do you like to throw together for dinner?
Autumn Apple and Turkey Salad
Ingredients
- Mixed Baby Greens or salad greens of choice
- About 1 c leftover turkey or chicken, chopped or shredded
- One apple cut into matchsticks
- 2 oz. sharp white cheddar cheese cut into matchsticks, or shredded
- 2 T walnuts
- 2 T dried cranberries
- Creamy Greek Yogurt Maple Dijon Dressing or other Honey Dijon dressing
- Optional whole wheat tortillas
Instructions
- Divide salad greens between two plate (or tortillas).
- Top each with half of the turkey (or chicken), apple, cheddar cheese, walnuts, and cranberries.
- Drizzle with salad dressing.
